- Preheat the oven to 375 degrees F. In a large bowl combine all the ingredients, tossing to coat. Season with salt and pepper. Put the potato mixture into a casserole dish, flatten it out with a spatula, and bake for 40 minutes, until the potatoes are tender and the gratin is bubbly. Let stand for 10 minutes before serving. Garnish with fresh chives.

- Preheat the oven to 400 degrees F. Butter a large baking dish with the butter.
- Slice the potatoes into sticks, and then cut the sticks to create a dice.
- Combine the cream and milk in a bowl. Add the flour, salt and some pepper. Whisk it together well so that the flour is incorporated into the milk/cream mixture. Add the diced potatoes to the prepared baking dish and pour the creamy mixture all over the top.
- Cover the dish with foil and bake for 20 to 30 minutes. Remove the foil and bake 15 to 20 minutes more. Just before serving, sprinkle on the grated cheese and return it to the oven until the cheese is melted and bubbly, 3 to 5 minutes. Sprinkle on the green onions and serve it hot. Creamy, dreamy and divine.

- Preheat oven to 350°F.
- Boil potatoes until just tender, 20-25 minutes; drain.
- When cool enough to handle, peel and dice into 1/2 inch pieces.
- Put potatoes in 3 qt round casserole or rectangular baking dish.
- In a large saucepan, melt butter over medium heat.
- Add flour; stir while cooking, 1-2 minutes.
- Whisk in milk and add garlic.
- Season with salt and cayenne pepper.
- Stir in cheddar cheese and all but 2 tbs parmesan cheese.
- Add potatoes to sauce and stir to mix evenly.
- Pour into casserole dish.
- Sprinkle remaining parmesan cheese over top.
- Bake casserole 45 minutes or until potatoes are tender and dish is bubbling and lightly brown on top.
- Let stand 5 minutes before serving.

Steps:
- Mix all ingredients together EXCEPT the potatoes, grated cheese, corn flakes and 1/4 cup melted butter.
- Spray a 9 x 13 pan with non-stick spray. Layer the potatoes, sauce mixture, and grated cheese in the pan. Repeat the layers until the ingredients are used up.
- Top with crushed corn flakes and pour 1/4 cup melted butter over the top. Bake at 375 degrees F. for 1 hour.

- Preheat the oven to 350 degrees F.
- Butter a 1 1/2 quart baking dish with about 1 tablespoon of the softened butter.
- Arrange a layer of potatoes in the baking dish, and sprinkle some of the cheeses over them. Continue layering potatoes and cheeses until you've used them all, ending with a layer of potatoes.
- In a small bowl, whisk the cream with the salt and pepper; pour this over the potatoes. Dot the remaining butter over the top and sprinkle with the paprika. Bake for 1 to 1 1/4 hours, or until the potatoes are tender and golden brown on top. Let stand for 5 minutes before serving.

- PREHEAT oven to 400°F; MEASURE the GROUP ONE ingredients into a small bowl (3 tablespoons parmesan cheese, 1 1/2 teaspoons kosher salt and 1/2 teaspoon ground black pepper); MIX well with fork; SET aside.
- PEEL and slice potatoes thinly; PEEL and slice onions thinly (into rings); GRATE 3 cups sharp cheddar cheese.
- LIGHTLY grease a 2.5 quart dish or 9x13 baking dish; LAYER 1/3 of the potatoes, 1/2 of the onion, 1/3 of the cheese, and 1/3 of the GROUP ONE mixture.
- REPEAT layers, finishing with with remaining potatoes, the remaining GROUP 1 mixture, and the remaining cheese.
- COMBINE 1 cup heavy cream with 3/4 cup strong chicken broth and 1/4 cup dry white wine in a bowl; ADD 1 teaspoon rubbed sage, 1/2 teaspoon prepared horseradish (or 1/2 teaspoon dry mustard), and 1 dash ground nutmeg; WHISK mixture well; POUR mixture evenly over potatoes.
- SPRINKLE 1/8 cup powdered parmesan cheese, 1 dash paprika, 1 dash freshly cracked pepper and 1/2 teaspoon chives or parsley, evenly over the top of mixture in baking dish for the GARNISH.
- BAKE 1 hour.
- ALLOW to stand about 10 minutes to cool and set, before serving.
- SERVE.
- GET READY to melt into your seat after just one taste!
GRACIE POTATOES
This is something I came up with when my daughter asked for cheesy hash browns and I had no raw potatoes in the house. She now asks for "Gracie Potatoes" at least once a week.

Steps:
- Pour milk over the potato flakes and set aside.
- Heat non stick skillet to medium.
- (Cooking oil or butter maybe used but will be absorbed by the potatoes). While skillet is heating stir the potatoes and milk until flakes are completely dissolved and mixture is thick but not crumbly.
- Form potatoes into palm size "patties" approximately 1/2-inch thick.
- Carefully place patties in the skillet leaving plenty of space between them.
- Fry for approximately 4 minutes and turn carefully.
- (They will break if you are not careful to get the spatula completely underneath them). Cover each patty with 1/4 of the cheese and cook until cheese is melted.
- You can add additional seasoning (salt, pepper, chili powder) to the potato mixture per your own taste.
- You can also use your own choice of cheeses.

GRATINEED POTATOES
Steps:
- Crisp potatoes in bowl of cold water; drain and pat dry.
- Grease a shallow gratin dish, large enough to hold potato slices in two layers. Arrange half of them in dish.
- Sprinkle half of the garlic, salt, pepper and cheese over the slices.
- Arrange the remaining slices over this layer and sprinkle with remaining seasoning and cheese.
- Pour on the milk.
- Bake at 400 degrees for 30 to 40 minutes. Check after 30 minutes. If potatoes are dry, add a little milk. The potatoes are served moist but not liquidy.

Steps:
- Preheat the oven to 400 degrees F.
- Lightly grease a medium baking dish with butter.
- Cover the bottom of the pan with an overlapping layer of potatoes.
- Lightly season with salt and pepper and top with a sprinkling of cheese.
- Continue layering potatoes, seasoning, and cheese, ending with the remaining cheese on top.
- Pour the cream over the potatoes, pressing lightly with your hands to cover the potatoes with cream.
- Cover with aluminum foil and bake until the cheese is absorbed into the potatoes and the potatoes are tender when pierced with a knife, about 50 minutes.
- Remove the foil and bake until the mixture is bubbly and the top is golden brown, about 10 minutes.
- Remove from the oven and let rest 10 minutes before cutting into portions.
