GRAHAM CRACKER COOKIE BARS
I got this recipe off of the back of a graham cracker box, and I could not believe how yummy they were! I have not made them with plain graham crackers, so I just used my own best judgement in estimating the additions of granulated sugar and cinnamon to compensate.

Steps:
- Preheat oven to 350.
- Grease a 9 inch square pan (I used an 8 inch square pan and it worked fine).
- In a large bowl, beat butter and sugar until creamy.
- Add egg, milk, and vanilla.
- Beat just until blended, the mixture will be grainy.
- Stir in graham cracker crumbs, coconut, and chocolate until just mixed.
- Spread evenly in pan.
- Bake 25 to 27 minutes until lightly browned on top.
- Cool and sprinkle with confectioner's sugar.
- Cut into bars and serve.

- Preheat the oven to 400 degrees F (200 degrees C). Grease an 8x8 inch baking dish.
- In a medium bowl, stir together the graham cracker crumbs and coconut. Pour in the condensed milk and melted margarine, mix until well blended. Press the mixture evenly into the prepared pan.
- Bake for 10 to 12 minutes in the preheated oven. Remove and let cool. Melt chocolate bars in a microwave or over a double boiler, stirring occasionally until smooth. Spread over the cooled bars, chill and cut into squares.

- Line a 10x15 pan with foil.
- Cover with a single layer of graham crackers.
- Mix the sugar and butter in a sauce pan. Boil for 2 minutes.

- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
- Combine the melted butter and graham cracker crumbs in a small bowl with your hands (the mixture should hold together when squeezed). Pour the mixture into the prepared dish and press it into the bottom in an even layer, using the bottom of a measuring cup to help. - Preheat the oven to 350 degrees F. Line a rimmed baking sheet with a silicone baking mat. Arrange the graham crackers in a single layer on the lined baking sheet.
- Put the butter, brown sugar, 3/4 cup chopped pecans and a pinch of salt in a saucepan and bring to a boil. Boil for 2 to 3 minutes, stirring constantly. - Preheat the oven to 350 degree F with a rack in the center of the oven.
- Make in a 9 inch square pan.
- Place the graham cracker crumbs and the melted butter in a medium mixing bowl.
- Use a wooden spoon or a rubber spatula to mix them together thoroughly.
- Scrape the mixture into the baking pan, and use your fingers to press the mixture evenly onto the bottom of the pan.
- Bake for 7 minutes, then remove the pan from the oven to cool while you make the lemon filling.
- Keep the oven at temperature setting.
- Break the eggs into a large mixing bowl, then add the granulated sugar.
- With the mixer on high speed, beat the mixture until it is light yellow and almost doubled in volume, about 3 minutes.
- Move the beaters around the bowl and scrape down the sides with a rubber spatula several times while mixing.
- Add the baking powder and salt, and beat on low speed until just mixed, scraping down the sides of the bowl.
- Beat in the lemon zest and juice.
- Pour and scrape the filling into the crust and smooth the top with a rubber spatula.
- Bake for 25 minutes, or until the top is golden brown and wiggles only slightly when the pan is moved.
- Remove the pan from the oven and allow it to cool.
- Place confectioners' sugar in a small sieve and sprinkle generously over the top of the cooled fining.
- Cut into 16 squares.
EASY GRAHAM BARS
This is a quick and luscious recipe. It is so easy that my girls used to enter them in the county fair every year when they were young. They were a guaranteed blue ribbon! A very good combination of flavors. Makes me hungry just remembering them.

- Crust:.
- Heat the oven to 350 degrees. In a large bowl with an electric mixer, or in the bowl of a stand mixer, beat the graham cracker crumbs, butter, sugar and flour until moist and well-blended. Press the mixture firmly and evenly over the bottom of a 13-inch by 9-inch baking pan. Bake until the crust is golden brown, 10 to 15 minutes.
- Topping and assembly:.
