  • Melt margarine in saucepan over medium heat. Add sugar, cocoa and egg. mix; bring to a boil, boil for 1 minute.
  • Add remaining ingredients all at once.
  • Remove from heat; mix well. Press into 8x8-inch pan. Cool.
  • Ice with almond icing and cut into squares.

  • Line a 10x15 pan with foil.
  • Cover with a single layer of graham crackers.
  • Mix the sugar and butter in a sauce pan. Boil for 2 minutes.

Steps:

  • Preheat oven to 350 degrees. Line the bottom and sides of an 8-inch square baking pan with foil; coat with nonstick cooking spray.
  • In a medium bowl, combine graham cracker crumbs, sweetened condensed milk, and salt; stir until moistened. Stir in 1 1/2 cups sliced almonds.
  • Spread mixture evenly in prepared pan (if mixture is very sticky, pat in with moistened fingers). Sprinkle with remaining 1/2 cup sliced almonds, patting in gently.
  • Bake until golden and a toothpick inserted in the center comes out clean, 35 to 40 minutes. Cool completely in pan.
  • Remove from pan; peel off foil, and cut into 16 squares with a serrated knife.

I did a search and couldn't find fruit cocktail squares like these. My mom used to make them every Christmas when I was a kid. They're very simple to make and really tasty. This recipe calls for an 8 x 8 pan, but I've made it in a 9 x 9 and just added a little more fruit cocktail. You can add a layer of whipped cream to the whole pan, or a dollop to each square when serving. They're really nice on their own too. Hope you enjoy! :)

  • Mix graham cracker crumbs with butter. Press into an 8 x 8 pan and bake for 15 minutes @ 300°F.
