BEST BROCCOLI RICE CASSEROLE

Steps:
- Preheat the oven to 350 F degrees.
- In a large skillet, melt the butter. Add the onion and garlic and cook, stirring with a wooden spoon, until softened, 3 to 4 minutes. Sprinkle over the flour, dry mustard and cayenne and stir to mix it in well. Continue to cook for 1 minute.
- Next, add the milk, stirring constantly; cook until thickened, about 2 minutes. Add the cream cheese and Parmesan, stirring until totally combined. Stir in the pepper, salt and paprika. Add the processed cheese, stirring until completely melted. Next, add 1 1/2 cups of the Cheddar and stir until melted. Then, fold in the broccoli and pimentos.
- In a large baking dish, create a base with half of the rice. Top with half of the broccoli cheese sauce. Repeat with the remaining rice, then the remaining sauce. Sprinkle the rest of the Cheddar evenly over the top of the casserole. Bake until bubbly, about 30 minutes.
GRANDMA'S BROCCOLI CASSEROLE
Steps:
- Defrost broccoli. Mix in large bowl cream of mushroom soup, cheese sauce, and Miracle Whip.
- Mix broccoli, 1/2 cup stuffing mix, and shredded cheese; then mix cream mixture with broccoli mixture. Pack in large casserole dish. Top with 1/2 cup stuffing mix.
- Then cook at 350 degrees F for 1 hour covered. Casserole should be bubbling and golden brown.

Steps:
- Combine first 6 ingredients.
- Sprinkle cheddar cheese on top of broccoli mixture.
- Combine crumbs and melted butter and sprinkle on top of cheese.
- Bake 35 minutes in a pre-heated 350 degree oven.
- This dish will serve 8.
- Any leftovers are reheated very nicely in microwave.
BROCCOLI CASSEROLE
My mom use to make this and now I make it for my family. We love it and there is never a "spick" left!! Make sure you don't take it out of the oven to soon or it will fall!

- Mix in a bowl, can of mushroom soup, mayonnaise, onion, cheddar and the 2 eggs beaten.
- Fold mixture together.
- Add the chopped broccoli ( I just chop up the bunch, into small pieces, maybe you will get 2-3 cups) fold that into the mixture.
- Put into a greased casserole, sprinkle with bread crumbs.
- Cook uncovered for 45 minutes at 350 degrees.

BROCCOLI CASSEROLE
A good side dish or meal, this casserole doesn't use any soup, butter, or mayo. The cheeses, eggs, and Greek yogurt give the dish its richness. I adapted this recipe quite a bit after finding it in Fix-It and Forget-It Lightly. I'm listing my version of the recipe.

Steps:
- Preheat oven to 350 degrees.
- Oil, spray, or butter a casserole dish (I used a round glass dish.).
- Thaw or cook the frozen broccoli. Drain well.
- Combine remaining ingredients, except for 2 oz. of the goat cheese.
- Add the broccoli and mix gently.
- Pour into prepared dish and bake for 50-55 minutes.
- Bump up heat to Low Broil for 5 minutes.
- Let it set for 5-10 minutes, then serve.

GRANDMA'S CHEESY BROCCOLI & CHICKEN CASSEROLE
This is down home comfort food at it's finest. It was the only way my grams or mom could get me to eat my broccoli while growing up. These days I use brown rice for a lower carb, healthier version. Sometimes I also use chicken thigh instead of breast because it's so much more tender. I hope you love it was much as I do.

Steps:
- Chop onions, green peppers, and celery into small pieces.
- Fry chopped vegetables in half of the vegetable oil.
- Cube chicken.
- Flour and salt the chicken cubes and brown in remaining oil--add more if needed.
- Add mushroom soup and milk and stir until mixed.
- Butter a large baking dish
- Add chicken mixture, cooked rice, broccoli, and remaining vegetables.
- Stir, cover, and cook 45min in 350 degree oven.
- Uncover, top with Cheese Whiz, return to over for 5 to 10 minutes--until cheese is completely melted.
