GRANDMA CHARLOTTE'S GERMAN POTATO SALAD image

Steps:

  • Boil potatoes in its skin until they are "al dente", not too soft. Leave them to cool, peel and cut in slices. Chop onion and the meat (or bacon) and fry in some oil. Do not discard the fried oil. Chop Cornichons. Mix potatoes, Cornichons, onions and meat/bacon together with some of the fried oil (1 tablespoon). Add 1 tablespoon of mustard, some salt and pepper as well as the Creme Fraiche. Stir. In order to keep the salad moist and from drying out, add some of the Cornichon juice (Grandma says a shot of Cornichon water, never managed to give a more detailed info). Leave in a cool place over night. Another variety of the salad was without Creme Fraiche (as my uncle Tom doesn't like it), simply omit the Creme Fraiche and add a bit more oil. Most excellent with warm Wiener (our traditional Christmas dinner)

5 pounds small, waxy potatoes
1 small glass of Cornichons (gherkin)plus their juice
1 medium white onion
1 slice of dried meat (alternatively couple of slices of low fat bacon)
1 tablespoon of mustard
salt, pepper
100-150g Creme Fraiche

Grandma's Creamy Potato Salad image

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and let cool enough to handle, 10 to 15 minutes. Cut into cubes.
  • Mix mayonnaise, celery, onion, vinegar, mustard, salt, and pepper together in a large bowl. Add potatoes and mix to combine. Stir in eggs and sprinkle with paprika.

Traditional German Warm Potato Salad image

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 30 to 40 minutes. Drain. Cool until easily handled, about 5 minutes. Peel while still warm. Cut into thin slices and put in a large bowl. Add onion.
  • Mix hot broth with vinegar, oil, salt, and sugar. Pour immediately over warm potatoes and onion; the potatoes need to still be warm so they can absorb the dressing better. Allow to stand for 5 minutes; season with salt and pepper. Sprinkle with chopped chives and serve warm.

Steps:

  • Place potatoes in a stockpot and cover with water. Bring to a boil. Reduce heat; cover and cook until tender, 15-20 minutes. Drain. When cool enough to handle, peel and slice potatoes; cool completely., For the dressing, in the top of a double boiler or metal bowl over barely simmering water, heat 1 cup water, butter and vinegar until butter is melted. In a small bowl, beat eggs; add sugar and cornstarch. Add to butter mixture; cook and stir until thickened, 5-7 minutes. Transfer to a large bowl; cool completely. , In a small bowl, beat cream until stiff peaks form. Stir Miracle Whip into cooled dressing mixture; fold in whipped cream. Stir in onion, green onions, salt and pepper. Add potatoes; toss lightly to combine. Refrigerate, covered, until chilled., To serve, top with hard-boiled eggs; sprinkle with paprika.

GRANDMA FLO'S GERMAN POTATO SALAD

A wonderful German dish, that has been passed down from my grandmother to my mother and now to me. The trick to this recipe is not to stir the bacon & cream mixture, let it reduce in size and foam. This will cut the grease from the bacon into the cream and it will not separate later on.

Grandma Flo's German Potato Salad image

Steps:

  • Cook potatoes until tender but not mushy.
  • Peel and dice into a large bowl.
  • Add the onion, vinegar, sugar, salt and pepper.
  • Mix together and set aside for one hour.
  • Brown the bacon until crisp, pour off half the grease.
  • Add the half & half, DO NOT STIR THIS, LET IF BOIL UNTIL ALL FOAMY.
  • When the bacon and half & half is all foamy pour over potato mixture and stir.
  • Serve this at room temperature or just a slight bit warm.
  • DO NOT HEAT TO THE BOILING POINT, YOU WILL BOIL THE VINEGAR OUT OF THE RECIPE.

  • Meanwhile, in a large bowl, combine the oil, rice vinegar, sugar, remaining tablespoon salt (I know that sounds like a lot; feel free to add less and season to taste at the end but keep in mind that potatoes require a lot of salt), pepper, smoked paprika, red onion and parsley. Stir to combine. Set aside, stirring occasionally and allowing the onions to marinate and pickle in the dressing while the potatoes cook.
  • Drain the potatoes in a colander. While they are still hot (as hot as you can handle), cut them bite-size into halves, thirds, or quarters, depending on the size, and place in the bowl with the dressing. Using a large rubber spatula, toss the potatoes with the dressing, being careful not to break up the potatoes too much. Cool to room temperature, stirring occasionally until the potatoes soak up all the vinaigrette. Cover and refrigerate at least 4 hours or overnight. When ready to serve, bring the potato salad to a cool room temperature. Stir well, then taste and adjust seasoning with more salt, pepper, or sugar, if necessary.   • Potato salad should be left out for no more than two hours (or one hour if the temperature is above 90 degrees). Leftovers should be promptly refrigerated.

  • Cook the potatoes over high heat in a large saucepan until water comes to a boil. Season generously with about 1 tablespoon of kosher salt. Reduce the heat to medium so that the water is still gently bubbling and cook the potatoes for about 10 minutes or until they are easily pierced with a fork and the skins are barely starting to pull away from the cut edges of the potatoes. Drain the potatoes and cool until they can be handled. Cut into large dice and add back to the pan you cooked them in to keep warm.
