MAMAW'S CHICKEN AND RICE CASSEROLE

I grew up on this recipe, my Grandmother got it from a lady from church at a pot luck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good! You can use less butter on top of course, my Momma and Mamaw always put the full stick on top (gotta love Southern ladies and their butter!)

Mamaw's Chicken and Rice Casserole image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease sides and bottom of a casserole dish.
  • Stir chicken, water, rice, cream of chicken soup, cream of celery soup, and cream of mushroom soup together in the prepared casserole dish; season with salt and pepper. Arrange butter evenly over the top of the chicken mixture.
  • Bake in preheated oven until the rice is tender and the chicken is cooked through, 1 hour to 75 minutes. Cool 15 minutes before serving.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 11x7-inch baking dish with butter.
  • Stir chicken, soup, rice, celery, salad dressing, eggs, lemon juice, and onion together in a large bowl. Pour into the prepared baking dish. Sprinkle with cornflake crumbs.
  • Bake in the preheated oven for 45 minutes. Sprinkle with almonds and bake until bubbly, about 15 minutes longer.

Steps:

  • Preheat oven to 375 degree. Combine undiluted soup, water, rice, 3/4 tsp dill, and black pepper in a 13x9 dish, mix well.
  • Remove skin from chicken pieces, discard skin.
  • Arrange chicken pieces on top of rice mixture. Cover tightly with aluminum foil, bake for 45 minutes.
  • Melt butter in small saucepan over low heat, remove from heat. Add crushed crackers, paprika, and remaining dill to butter. Stir until blended.
  • Sprinkle cracker mixture on top of chicken pieces, bake (uncovered) until chicken is tender and rice cooked (approx. 5-10 mins longer). Season to taste with salt and pepper.

Grandma's Favorite Chicken and Rice image

Steps:

  • Place chicken in a covered baking dish that has been sprayed with Pam.
  • In a bowl, mix other ingredients well and spoon over chicken.
  • Sprinkle with paprika and cover pan with lid.
  • Bake at 350 degrees for one hour and 15 minutes.
  • Remove cover and serve.
  • Enjoy!

Steps:

  • 1. cut chcken nto squares as small as possible. Then saute n skllet till white.
  • 2. pour soup, milk, and seasonings into crock-pot. turn on high. cook while chicken turning white after chicken is white pour into crock. cook for 30-45 mins.
  • 3. after 30-45 mins add rice, cook another 20-30 mins. check for rice tenderness. if not enough fluids in crock with periodic checks add WATER 1/4 cup at time till satisfied if too thin add more milk.
  • 4. after rice tender cool if want ENJOY!!!!! ADD MORE SEASONINGD AS WANTED OR NEEDED

3 lb chicken breast halves, skinless and boneless
2 c rice, instant and uncooked

4 c milk
1 pinch garlic powder
1 pinch onion powder

  • Mix all ingredients and place in 9 x 13 pan.
  • Cook at 350 degrees for 30 minutes.
  • This is a great use for leftover rice.
  • Optional: Sprinkle a little Mrs. Dash on the top for added flavor.
  • Try different veggies, or add things like mushrooms, etc. for a different twist.
