MENONITE COUNTRY OLD FASHIONED BEEF POT PIE BY FREDA
I first tasted this while going thru the Menonite/amish Country. This is as Close As I can get. Not sure why they call this a pot pie, Its more likea beef stew to me, with noodles. Seems every home, just as in our Homes cooks a bit differently but with very basic ingredients. Nothing they don't have on hand.

Steps:
- 1. Cook the meat in Salt & pepper Water till tender. Remove meat from the Broth. . .set aside Make Dough while Beef is Stewing in the pot. Add: Onion and parsley & frozen vegies. Bring broth to a boil. add in alternate layers, Cubed potatoes, & dough squares to boiling broth
- 2. To Make dough: Beat egg and milk. Add flour to make stiff dough. Roll out paper thin, then cut into 1" squares.
- 3. Keep Broth Boiling while adding dough squares in order to keep them from clumping & packing together. Cover and cook 20 Min. Adding more Water if Necessary to keep a good broth.
- 4. Add cooked stew meat, and stir thru the pot pie. Serves 6-8 easily with Buttered Biscuits, or Fresh baked French bread.

Steps:
- 1. PASTRY: cheat and use refer store bought, or make your favorite, or this one. Blend Shortening/Lard and flour with pastry cutter, till you have created a uniform crumbly texture, about the size of peas.
- 2. in seperate bowl; mix egg, vinegar, & col water. Add to Shortening and flour mixture. Mix ONLY til mixed,. . "NO MORE". NOTE: This is the Key t a tender crust. DO NOT OVER HANDLE THE DOUGH! Roll into ball of dough. Place in freezer 10-15 min to chill. Roll out on lightly floured surface about the thickness of a CD case.
- 3. use wide mouth jar lid as cutter, or Cut 4" rounds of pastry dough and line tart pan or Muffin tins. Preheat Oven @ 400
- 4. FILLING: In Heavy saucepan, combine raisins,butter, sugar, syrup, & salt, over low heat til butter is melted and sugar is disolved. Do not let mixture get too hot. NOTE: Only heat to WARM stage. Remove from Heat.
- 5. Stir in Eggs, & vanilla.
- 6. Spoon filling into tart shells, filling 2/3 full.
- 7. Bake: 400 for 15 min. Reduce heat to 350 and bake 5 more minutes, or until pastry is a golden brown. DO NOT OVER BAKE DO NOT let filling bubble over or you will have trouble geting your tarts out of the pan. Cool 15 min before removing from pan.
- 8. HINT: centers will be slightly runny, but not too runny, so every bite you take will ooze down your chin, and these crusts flakey.I like runny--the type the dribbes when you bite into one. if you like your more firm, bake a full 20 min.

- Heat the oven to 400°F.
- Place the potatoes, carrots, peas, chicken, mushrooms and soup in a large bowl, and fold together until blended. Add the onion powder, sage, rosemary and pepper, and stir until blended.
- Form 1 pie crust into a deep dish pie plate. Pour the pot-pie mixture into the crust, and place the top crust over the top. Seal the edges with a fork or by pinching with the thumb and forefinger. Cut two, 1-inch slits in the center of the crust to vent.
- Bake 10 minutes; reduce the heat to 350°F Bake for an additional 40 minutes, or until the crust is golden. Place on a wire rack to cool slightly. Cut the pie into 8 wedges to serve.

My Grandma didn't cook fancy dishes, but everyone of them was filling, made with love, and carry fond memories of the grandkids fighting over the last piece. I have updated it to use a few modern conviences.

Steps:
- 1. In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
- 2. In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour and all spices. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
- 3. Preheat oven to 350 Gently spray two pie pans and place one pie crust in each pan.
- 4. Place half the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape. Repeat with second crust
- 5. Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

- 1. Boil and Mash Potatoes as Normal. Set aside. (I use 1 Med Potato per Person, This usually works well)
- 2. In a large Skillet, Brown Beef. Or heat your Left over pot roast. Add seasonings Add Onions Add Carrots
- 3. In Seperate Skillet; add Butter to melt over med heat. add flour and whisk well into a smooth paste.(This is called a Rue) now add Beef stock and whisk till smooth and gravy consistency. Add worchestershire sauce or Kitchen Bouquet for color and additional flavor.
- 4. Pour Gravy over the Browned beef & Vegies in skillet. Mix well. Pour into Pam sprayed Casserole Dish. spread evenly.
- 5. To your Mashed Potatoes; add Sour Cream and the 1 egg yolk. Mix well. Spread over top of the Beef & Vegie Mixture. Sprinkle with Paprika Place under Broiler Just Long enough to See a Golden Brown Top, and its ready to serve. Enjoy with Fresh baked Bread or Garlic bread.

- Heat oven to 400ºF.
- Cook and stir chicken in dressing in large skillet on medium heat 5 min. or until done. Stir in vegetables and soup. Spoon into 9-inch square baking dish sprayed with cooking spray; top with VELVEETA.
- Unfold pastry sheet; place over chicken mixture. Fold under edges of pastry; press onto top of baking dish to seal. Brush with egg. Cut several slits in pastry to permit steam to escape. Place dish on baking sheet.
- Bake 30 min. or until crust is deep golden brown. Let stand 5 min. before serving.

- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in onion powder and salt. Transfer to a greased 9-in. square baking dish. - PREHEAT OVEN @ 400 degrees. Spray casserole Dish with non-stick cooking spray for easy cleanup. To Make FILLING: Melt Butter in skillet, add the Following: Onions, Celery, Chicken, Salt & pepper,thyme & garlic. Saute til celery is tender and chicken is cooked.

- CRUST: In separate Bowl, Mix together Crust ingredients, mix well. Pour this evenly over the Filling, Bake in Oven @ 400 Degrees for 30-40 minutes til golden brown on top and Bubbly. Note: Can be made with Burger, beef or Ham, Also tuna.
