GRANDMA'S CHEWY MOLASSES COOKIES
These chewy cookies are what you remember from your childhood....soft inside, a fragrant spicy aroma, and a crinkle-top that is crusted with sugar. The only change I made from my Grandma's recipe was to get rid of the artery-clogging shortening. These cookies hold up well for shipping - I mail them to my kids who are in college.

Steps:
- Using a strong mixer, mix butter and sugar until sugar has aerated the butter and it is light and fluffy (5 minutes). Blend in molasses and egg gently.
- While butter/sugar is mixing, blend all dry ingredients in a separate bowl. Add to creamed mixture in thirds until fully blended (this is where the powerful mixer comes in handy!).
- Refrigerate 1 hour (which makes it easier to roll into balls).
- Form into balls a little smaller than a golf ball and roll in sugar. Place on parchment paper or greased sheet.
- Bake 350 degrees for 12-13 minutes (for 20 large cookies).
- Hint - When the cookies are done baking, they puff up in the center and crack, but wait until the inside of the crack turns from shiny dark brown (not cooked) to medium brown (done).

MOMMA'S WHEAT GERM COOKIES
Good Cookies!! You'll be giving out this recipe forever!!! Be sure to leave the cookies on the cookie sheet for at least one minute after removing them from the oven. This allows them to "flatten" and firm up, also make sure you use rolled oats, not instant! Please don't let all the ingredients scare you away from this recipe.

- Preheat the oven to 325 degrees F (165 degrees C).
- In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the eggs, one at a time then stir in the vanilla. In a separate bowl, combine the oats, wheat germ, flour, baking powder, baking soda and salt. Stir the dry ingredients into the creamed mixture. Finally, mix in the coconut, pecans and dates. Drop by rounded spoonfuls onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for a couple minutes before removing to a wire rack to cool completely.

- In a large bowl, beat brown sugar and oil until blended. Beat in egg, then applesauce. Combine the flour, wheat germ, oats, baking powder, and salt; gradually add to brown sugar mixture and mix well. Stir in chocolate chips and walnuts., Drop by rounded teaspoonfuls 2 in. apart onto baking sheets coated with cooking spray. Flatten slightly with a glass bottom coated with cooking spray. , Bake at 350° for 10-12 minutes or until edges are lightly browned and cookies are set. PEANUT BUTTER WHEAT GERM COOKIES
I've adapted this from an old newspaper recipe clipping (source unknown), likely from the 1970's when wheat germ was a miracle ingredient. I've substituted brown rice flour for all-purpose flour as I prefer this texture and flavour variation, but you could just as easily revert to the original with good results. The original also called for 1 c. wheat germ, which I've halved and added 1/2 c. spelt flour, but this is a highly adaptable and forgiving recipe so feel free to experiment depending on what you have on hand. I recommend pure peanut butter (peanuts as only ingredient) rather than the soybean oil, sugar and salt-laden popular brands.

Form into balls on cookie sheet (ungreased, preferably with baking parchment) of whatever size you like and flatten to about half the ball thickness- use the typical criss-cross fork pattern if you like a traditional look. My grandmother always has these cookies in the cookie jar. For a nut-free version, I use 1/2 c extra corn flakes. Can also sub bran flakes, wheat flakes, Total cereal, whatever you have on hand. Makes a very thin, crunchy but chewy cookie. One of my husband's favorites.
