GRANDMAS NO CHOP NO BAKE FRUITCAKE
This is the only fruitcake I'll eat. Grandma stopped making this a few years ago when she became too frail and I recently started making it for the family in her place. For me and my family, this is a taste of christmas! Don't forget to save cherries and nuts for the tops of your loaves, it makes it really pretty and festive. You can use green cherries if you want. This recipe originally called for 3 pounds of unshelled brazil nuts

Steps:
- Crush graham crackers and mix with raisins and cherries.
- Add brazil nuts.
- Scald milk in double boiler and add in marshmallows.
- Stir until melted.
- Remove from heat.
- Add cracker mixture to hot marshmallow mixture and blend thoroughly.
- Line loaf pans with wax paper or foil.
- Spoon in mixture, press down firmly.
- Decorate top with reserved cherries and brazil nuts.
- Age 1 month in fridge.
- Wrap cake in foil to keep moist.
- This freezes very well after the initial aging of cake.
- If you're lucky, like I am, you can find shelled brazil nuts at a health food store. I find mine at an amish grocery store.

THE FANNY FARMER DARK FRUITCAKE
This famous fruitcake recipe by Fanny Farmer goes back years, I made it recently using the brandied fruit cake option as stated on the bottom of the recipe and I strongly recommend to use that method as the brandy will strongly intensify the flavor and preserve the cake, this fruit cake is wonderful and I plan on making it again.

Steps:
- Set oven to 325 degrees F.
- Butter two 9 x 5-inch loaf pans.
- Line the pans with foil, then butter the foil.
- Cream the butter or shortening.
- Add in brown sugar; beat until light.
- Add in lemon extract and eggs and beat well.
- Stir in molasses and blend to combine.
- In a small bowl combine the flour with baking soda, cinnamon, allspice, mace, cloves and salt; beat into the creamed mixture until combined.
- Add in milk; beat until combined.
- Stir in the candied fruit, candied cherries, candied citron, dates or raisins and nuts; mix well.
- Transfer/divide the batter between the two pans.
- Bake for 1 to 1-1/4 hours or until the loaves test done.
- Turn out onto racks to cool.
- When completely cooled wrap well and store in an airtight container.
- BRANDIED FRUIT CAKE OPTION; soak two large pieces of cheesecloth in brandy.
- Wrap each fruit cake in the cheesecloth covering all sides, then wrap well in foil.
- Moisten the cheesecloth with additional brandy every few days for about a week.

Steps:
- Spray 10 mini loaf pans with vegetable oil cooking spray.
- In a 2-quart saucepan, heat the milk and marshmallow together over low heat.
- Stir constantly, because condensed milk scorches easily, until the marshmallows are melted.
- Remove the mixture from the heat.
- Combine the cracker crumbs, pecans, coconut, dates and cherries in a large bowl.
- Add the bourbon to the milk mixture and pour over the crumb mixture.
- Mix well with your hands.
- Scoop the mixture into the prepared pans and press down firmly to mold into shape.
- Refrigerate for 2 days.
GRANDMA'S CLASSIC NO-BAKE COOKIES
This is the first cookie I ever learned to make as a child. They're very delicious with the peanut butter and oatmeal. You can eat them fresh out of the pan in a bowl with a spoon, which is delicious with a glass of milk besides. This no-bake cookie recipe was my grandmother's, and my mother taught it to her children, and I will to mine. I hope you have as much fun making this either by yourself or with your children, as I did with my mom. Separate cookies with waxed paper if putting in a tin or baggie to prevent sticking.

- In a large bowl combine wafers, dates, cherries (if using), and nuts.
- Mix well, then pour Eagle Brand Milk over and continue to mix until all dry ingredients are saturated with the milk. You may have to use your hands to mix as this mixture is quite stiff.
- You might have to add a little more milk or water- but only a little at a time.
- Line a loaf pan with waxed paper letting it extend over the sides some.
- Pack the mixture in the prepared pan, leaving no spaces. Refrigerate 2-3 days before slicing to serve. Slice thinly and refrigerate remaining cake.

Steps:
- Bring sugar, butter, milk and cocoa to a boil for 1 minute.
- Then add peanut butter and vanilla. When peanut butter is melted, add quick oatmeal. Stir together.
- Drop by tsp. on wax paper as fast as possible. Cool and serve.
