Greek Chicken Chili (Weight Watcher Friendly 7 Points) image

Steps:

  • Heat olive oil over medium high heat in a large stock pot. Add chicken. Cook and stir until chicken is lightly browned, but not cooked through, about 4 minutes.
  • Add onions, zucchini, red pepper and garlic. Cook and stir until vegetables begin to soften, about 3 minutes.
  • Stir in chili powder, cumin and oregano. Cook 1 more minute. Add tomatoes with their juice, pasta suace, chickpeas, brown sugar and pepper. Bring to a boil. Reduce heat to low. Cover and simmer for 15 minutes.
  • Remove from heat. Stir in cilantro. Ladle chili into serving bowls and top with feta cheese.

3 small chicken breasts, boneless and skinless, cut into cubes (l lb/454 g)
1 cup red onion, chopped
1 cup zucchini, diced
1/2 cup red pepper, diced
2 teaspoons garlic, minced
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon oregano
19 ounces tomatoes, diced, undrained
1 1/2 cups pasta sauce
1 cup chickpeas, drained and rinsed
1 tablespoon brown sugar
1/4 teaspoon black pepper
2 tablespoons cilantro, minced
1/3 cup reduced-fat feta cheese, crumbled

Steps:

  • In a soup pot, heat oil and add chopped onion and turkey.
  • Brown meat.
  • Add garlic, oregano, thyme, bay leaves and pepper.
  • Cook 1 minute or so.
  • Add tomatoes with juice, drained chickpeas, drained olives and chopped artichoke hearts.
  • Stir well.
  • Simmer for about one hour.
  • Serve with feta sprinkled on top.

I'm really not sure where I got this recipe--from some "bean" website, I think. It's really very tasty. I don't use the olives, but the feta cheese is a must.

Steps:

  • Saute ground beef, onion and garlic in a large saucepan until beef is browned (about 5 minutes). Add the spices, herbs and cocoa and cook about 1-2 more minutes.
  • Stir in tomatoes, beans and honey. Heat to boiling, then reduce heat and simmer, covered for about 15 minutes. Uncover and simmer another 10 minutes.
  • Spoon chili over pasta. Garnish with feta cheese and olives.

12 ounces extra lean ground beef
1/2 cup onion, chopped
1 teaspoon garlic, minced
2 tablespoons chili powder
2 teaspoons dried oregano
1 teaspoon cinnamon
1/2 teaspoon dried mint
1 tablespoon unsweetened cocoa
1 (28 ounce) can diced tomatoes
1 (15 ounce) can garbanzo beans, rinsed and drained
1 (15 ounce) can dark red kidney beans, rinsed and drained
2 teaspoons honey
6 cups cooked elbow macaroni

  • In a large bowl, combine 20ml (4 tsp) oil, garlic, oregano, lemon juice, 5ml (1 tsp) zest, salt and pepper; add vegetables and toss to coat. Lift vegetables out of bowl with a slotted spoon, leaving some oil mixture in bowl. Place vegetables in an even layer on one side of prepared pan, leaving room for chicken. Add chicken to bowl and turn to coat; place on empty side of pan.
  • Roast until vegetables are tender and chicken is cooked through, stirring vegetables once, about 15 to 20 minutes. Drizzle vegetables with remaining 5ml (1 tsp) each oil and zest; toss to coat.
