GREEK FRIES

I used to get these fries at cheap little Greek restaurants. When I moved, however, no place served them anymore. So I started experimenting and found it was quite easy to make them on my own. These are a simple and delicious way to do fries.

Steps:

  • Cook French fries according to package directions.
  • Sprinkle with lemon juice; sprinkle on feta cheese and seasoning.
  • Serve and Enjoy!

1 (32 ounce) bag French fries
2 teaspoons lemon juice
1/3 cup feta cheese
1 tablespoon all purpose Greek seasoning (if Greek seasoning is unavailable, use 1/2 T oregano plus 1/2 t each thyme and parsley)

GREEK FRENCH FRIES

The smell of these babies frying in extra virgin olive oil reminds me of my childhood days in Kefalonia. The aroma would perfume the whole village when my yiayia would fry these potatoes. Back when I was a little girl in the 80's, Greeks were still only using extra virgin olive oil, even for frying. Nowadays, it's a bit different in Greece with cheaper oils readily available. You can use corn oil if you want to make these often, but you have to do it at least once with extra virgin olive oil. Don't be cheap.

Steps:

  • In a large skillet, heat the olive oil. To test when it's ready, use the handle on a wooden spoon by placing it erect in the oil. If bubbles start forming around it, you know it's ready.
  • Add the potatoes, being careful not to crowd them. If you put too many, the temperature of the oil will drop, and they will come out mushy. Fry them in batches instead.
  • Once golden brown, remove and place on paper towels.
  • Season with salt, pepper, and oregano.
  • Add some grated cheese if you wish. Just remember not to salt the potatoes too much if you add the cheese.
  • A few drops of lemon juice on top is a must for my Greek taste buds.

  • Cut each potato lengthwise into 8 wedges.
  • Combine lemon juice, olive oil, oregano, pepper, salt, and garlic in a large bowl.

  • Fill shallow pan with 1/2 to 1 inch of olive oil (the stuff in the big tin jug on the bottle shelf of the store -- don't waste the really good stuff).
  • Heat oil to 350 (or until bubbles form around a wooden spoon).
  • Fry bag of french fries to desired level of brown and drain on paper towels.
  • Season to taste with salt, pepper, paprika, and oregano.
  • To make the tzatziki sauce you can either chop everything by hand and mix or throw it all in the food processor and pulse a few times. I like garlic so I usually add more.
