Round out this pizza with a salad or fresh, vegetable relish tray. Sometimes, I serve a side of low-fat ranch dressing to dip the veggies and pizza crust into.

Steps:
- In a food processor, pulse the flour and salt until combined. Add the shortening and pulse until the mixture resembles cornmeal mixed with pea-sized bits, about 10 times. While the motor is running, drizzle in the water until a dough forms.
- Form the dough into a disk, wrap it in plastic wrap, and refrigerate until thoroughly chilled, at least 1 hour.
- Preheat oven to 350 degrees F.
- Grease a 9 by 13-inch baking pan. Divide the dough in half; press half the dough up and around the inside of the pan. Set the remaining dough aside covered with plastic wrap.
- Line the pan with foil and fill with dried beans. Bake the dough for 20 minutes and remove the beans and foil. Continue baking the crust until golden brown, about 10 minutes more. Let the pan cool on a rack.
- Meanwhile, make the spinach filling: Heat the oil in a large saucepan over medium-high heat. Add the onions and cook, stirring, until lightly browned, about 6 minutes. Add the rice and cook, stirring occasionally, for 2 minutes. Add the spinach, little by little (adding more as the previous batch wilts), and cook, stirring, until completely wilted. Season with the salt and pepper and stir in the parsley, dill, and scallions.
- Drain the spinach mixture in a colander in the sink and let cool.
- Once the spinach is cool, stir in the feta and spread the mixture into the crust. Roll the remaining dough out on a well-floured surface, into a rectangle large enough to cover the baking pan. Top the spinach with the dough and pinch around the sides to seal. Score the top of the pie in the center, brush the surface of the dough with egg wash, and bake until golden brown, about 40 minutes.
- Remove the pie from the oven, let cool, cut into squares and serve.

Add the garlic and cook for 30 seconds until aromatic. In batches, add the spinach and cook until wilted, about 5 minutes. Remove the pan from the heat and add the feta cheese and mint. Season with salt and pepper, to taste.
- Using the tines of a fork, prick the surface of the dough all over. Spread the spinach mixture on top and dot with butter.

GREEK-STYLE SPINACH PIZZA WITH PHYLLO CRUST
If you love phyllo and spinach, then this is one you have to try! Keep the phyllo stacked between two sheets of wax paper, and covered with a damp tea towel until ready to use to keep from drying out. You can use frozen chopped spinach in place of fresh if desired. The amounts listed for the feta and olives are only a guidline, you can use as much as desired.

GREEK-STYLE SPINACH-OLIVE PIZZA (VEGETARIAN)
Kasseri cheese is a creamy Greek cheese that is almost similar to a very mild cheddar or mozzarella you may substitute the Kasseri cheese for mild cheddar or mozzarella if desired. A pre-baked focaccia crust will work well with this also in place of the store-bought boboli pizza crust, you can also make this on a pre-baked pizza crust. If the Kasseri cheese has sun-dried tomatoes already added into the cheese, just omit the tomatoes from the recipe. Adjust all amounts to suit taste, this is very good! recipe#65641 works well with this pizza!

GREEK PITA PIZZAS
Pita bread is the crust for these single-serving pizzas that get Mediterranean flair from olives, spinach and feta cheese. Breadsticks and a wedge of iceberg lettuce drizzled with salad dressing (pictured above right) make fine pizza partners. Or serve an appetizer of fresh vegetables with dip, then cap off the meal with lemon Italian ice.
