GREEK TOSTADAS
Well, sorta. Took a recipe and embellished it. The lamb meat can be omitted if you wish. Inspired by a recipe in Betty Crocker's Meatless Main Dishes. If you want to spice it up further, garnish with fresh minced hot peppers! A good way to use up leftover refried beans!

Steps:
- Preheat oven to BROIL.
- In a bowl, combine the cumin, oregano, chili powder, garlic powder, allspice and cinnamon with the refried beans.
- Divide and spread the bean mixture on pita bread. Add the cooked lamb, if using.
- Top with the bell pepper, diced tomato, green onion and cheese (use a combination of mizithra and cheddar if you want).
- Broil for approximately 2-3 minutes, watching oven *carefully*.
- Remove from oven and top with the lettuce and cilantro. Garnish with the salsa verde, sour cream and minced chili pepper, too!
- Note: Yield is for tostadas without the optional meat. Half pound indicated in recipe is pre-cooked.

- A few hours (or even the night) before, add chicken to a baking dish or ziplock bag. Sprinkle with salt and pepper. Whisk together olive oil, lemon juice, vinegar, garlic and dill. Pour over chicken, stick in the fridge and let marinate.
- Cook chicken however you’d like – I simply add mine (discarding the marinade) to a skillet oven medium heat and cook until golden, about 10 minutes. In a large bowl, combine tomatoes, onions, artichokes, olives and dill. Add a drop of olive oil or lemon juice and toss to coat. Season if desired.
- When getting ready to serve, heat another skillet over medium heat. Add olive oil about 1/4 teaspoon at a time, add one tortilla and cook for about 30-60 seconds per side, until just golden and bubbly. Remove and let drain on a paper towel. Set aside until ready to use.
- To assemble tostadas, spread a bit of whipped feta on each crisp tortilla. Add chicken on top then cover with the tomato and artichoke mixture. Top with some extra feta. Hummus makes a nice addition too.

- Heat the olive oil over medium high heat. Add the eggplant and chickpeas. Cook for 7-8 minutes until almost cooked through. Add the sundried tomatoes, garlic, salt, pepper, oregano, and thyme. Cook for 1-2 minutes until fragrant and eggplant is tender.
- Toss together the cucumbers, tomatoes, red onion, lemon juice, red wine vinegar, and dill. Season with salt and pepper. Be careful with the salt since you will be adding feta to the tostadas.
- Cut the whole wheat pitas in half horizontally to create 2 round pitas. Toast the pitas in the oven or toaster oven.
- Top toasted pita halves with eggplant and chickpea mixture, cucumber and tomato salad, and feta cheese.
