GREEN BEANS WITH POTATOES AND HAM
You can make the ham broth and shred the ham hocks a day ahead. The next day, reheat to simmering, and cook the potatoes and green beans.

- Combine ham hocks, onion, garlic, celery, thyme, bay leaf, chile, 3/4 teaspoon salt, and the water in a large pot. Bring to a boil over high heat. Reduce heat, and simmer, uncovered, 1 hour 30 minutes.
- Transfer ham hocks to a plate. Discard chile, and add potatoes to pot; simmer until just tender, 10 to 12 minutes.
- When ham hocks are cool enough to handle, pull meat off bones (discard bones), shred into bite-size pieces, and return to pot. Add green beans, and return to a simmer. Cover, and cook until beans are just tender, about 8 minutes. Season with pepper. Serve vegetables and meat with a slotted spoon; reserve broth for another use. If storing leftovers, store in broth.
SLOW COOKER GREEN BEANS, HAM AND POTATOES
I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It's delicious!

- Halve beans if they are large, place in a slow cooker with water to barely cover, and add onion and ham hocks. Cover, and cook on High until simmering. Reduce heat to Low, and cook for 2 to 3 hours, or until beans are crisp but not done.
- Add potatoes, and cook for another 45 minutes. While potatoes are cooking, remove ham hocks from slow cooker, and remove meat from bones. Chop or shred meat, and return to slow cooker. Season with garlic powder, onion powder, seasoning salt, bouillon, and pepper. Cook until potatoes are done, then adjust seasoning to taste.
- To serve, use a slotted spoon to put beans, potatoes, and ham into a serving dish with a little broth.

- Place ham hocks or shanks in water enough to cover & let simmer a good 2 hours. Remove ham & set aside to cool. Reserve broth. When cool enough to handle, cut into chunks. In a large heavy stock pot, melt butter on medium high. Add onions and garlic and ham. Cook until onions and garlic are tender and meat has browned a bit. Turn down the heat to medium and add green beans, chicken broth and 3 cans full of the broth from the cooked ham hocks. Just cover the beans with the liquid. If you need a bit more water, add it. Cover and cook beans for about an hour. Add, sugar, salt and pepper and stir well. Add potatoes and cook covered for another 25 to 35 minutes, or until the potatoes are fork tender. Remove lid for the last 10 minutes of cook time. Check and re-season if necessary. Crock pot method: place all in the pot & cook on low all day! Before serving remove the ham & cut into pieces & stir back into the beans & potatoes!
SMOKY NEW POTATOES AND GREEN BEANS
Gina: Green beans and new potatoes, simmered with some type of pork fat, are a classic Southern combination. This dish is one we both grew up on, and when we cook it at home, the smoky aroma of these simmering vegetables instantly transports us to our mothers' kitchens. There are few flavors more satisfying to any Southerner than the taste of tender new potatoes and green beans that have absorbed the salty, porky goodness of a smoked ham hock.

- Place the ham hocks in a large pot, and add enough water just to cover, then bring the water to a boil. Reduce the heat to low, cover, and simmer for 1 1/2 hours, skimming any scum that rises to the surface, until the ham hocks are very tender and the meat is falling away from the bone. Add the green beans, sugar, and salt to the pot and continue cooking, stirring occasionally, for another 25 minutes. Add the potatoes and Smash Seasoning to the pot, and cook until the potatoes are tender, about 20 minutes more.
- Remove the ham hocks from the pot. Discard the leathery skin (it should pull off easily), and, using a fork, pull the meat from the bone. Coarsely chop the meat, and add it back to the pot. Taste for seasonings, and then serve with hot sauce, if desired.
NEW POTATOES, GREEN BEANS AND HAM
This recipe was given to me by my Mother-in-law who raised 9 children and taught school for 40 years and didn't have much time to cook. It remains a family favorite with my children. Last night I had no broth, so I mixed Lipton's Garlic and Herb soup (1 packet) and 4 cups of water and it was wonderful, really added richness to the broth.

- I cook this in a crockpot all day, but may be cooked in a dutch oven on the stove, also.
- Add all the ingredients and cover, cook on low for 8 to 10 hours.
- If cooking on the stove you may need more broth, but the crockpot makes broth as it cooks, so you shouldn't need any more.
- Use your own judgement on the amount of broth.
- Serve with fresh, sliced tomatoes and corn bread for a great Southern meal.

SOUTHERN GREEN BEANS, HAM & POTATOES
I love homemade ham & green beans with potatoes, served with a skillet of cornbread and sweet tea! For this recipe, I took two "soul-food" recipes I had and combined them to come up with this one. It's just the way I like it. You can adjust the amounts of ingredients to your own taste. If I use ham hocks, I usually only add one or two slices of bacon for added flavor, just because I like bacon flavor. But if I don't have ham hocks, I use 4- 6 slices of bacon.

- Place ham hock and bacon in large Dutch oven pot or soup pot; cover with water.
- Bring to a rapid boil.
- Turn burner to medium to medium-high and let it come to a medium boil.
- Add the sliced onion.
- Let this cook while you wash and snap your beans (about an hour or more).
- Wash beans, cut off ends and break in half.
- Add beans, salt, sugar, garlic, pepper and parsley to the ham hocks.
- Let it come to a boil, then turn burner to medium, to medium-low.
- Let it slow boil for about an hour or more or less, depending on how well you like your beans cooked.
- About 15-20 minutes before done, add your potatoes.
- Boil until tender.

- Add the ham hock (or ham chunks) to the bottom of the crock pot, then pour in the green beans, water, and potato chunks. Don't cut the potatoes too large, or they will have a hard time getting done when everything else is ready. I like to go for 1 inch or smaller.
- Next, you will add the thyme, garlic powder, onion powder, black pepper, salt, cloves, and cinnamon. Mix together thoroughly, and then drizzle with a bit of oil (1-2 tablespoons) before covering.
- Cook on high for 4 hours or on low for 6-7 hours. This all depends on whether you'll be home or not and how quickly you need it to be done. Don't overcook, as the green beans will turn to mush. You do want the potatoes to get done, though.
- Once the green beans and potatoes are cooked, you will remove the ham hock and let it cool a bit before dicing up the ham. Turn the crockpot on the warm setting while cooling and cutting up the ham pieces. Add the ham pieces back in and serve.
