Steps:
- Preheat oven to 450°. In a food processor, process ham until ground; set aside. In a large bowl, combine the flour, baking powder, baking soda, onion powder, garlic powder and mustard. Cut in shortening until mixture is crumbly. Fold in ham and chives. Add buttermilk; stir just until the dough clings together. , Turn onto a lightly floured surface; knead gently 10-12 times. Roll dough to 1/2-in. thickness. Cut with a floured 2-1/2-in. biscuit cutter. Place in a large ungreased cast-iron or other ovenproof skillet. Bake until golden brown, 13-15 minutes. Brush with butter. Serve warm.

Steps:
- Stir together spinach souffle and next three ingredients with a fork until dry ingredients are moistened.
- Turn dough out onto a lightly floured surface; knead 8 to 10 times. Pat or roll dough to a 1/2 inch thickness; cut with a 2 inch round cutter. Place at least 1/2 inch apart on greased baking sheets.
- Bake at 400°F for 10 to 15 minutes or until browned.
- Mix butter and brown mustard. When biscuits are browned, let cool for 10 minutes; split and spread with butter/mustard mixture.
- Add baked ham. Serve.
GREEN EGGS AND HAM

- Place 2 eggs in a saucepan, cover with water and bring to a boil. Cook 8 to 10 minutes. Cool in a bowl of ice water. Peel the eggs, then separate the whites and chop them. Mash the yolks in a bowl, then whisk in 2 tablespoons warm water, the pickling liquid and mustard. Gradually whisk in the olive oil. Add 2 tablespoons parsley, the chives, tarragon, egg whites, pickles, 1/4 teaspoon salt, and pepper to taste.
- Combine the flour, the remaining 6 tablespoons parsley and a pinch of pepper in a shallow dish. In another dish, beat the remaining egg with the milk. Dip each piece of ham in the flour to coat both sides, then dip in the milk mixture and re-dip in the flour mixture.
- Heat 1/8 inch of olive oil in a large skillet over medium-high heat until sizzling. Fry the ham in batches until golden, about 4 minutes per side. Transfer to a paper-towel-lined plate. Fry the capers in the skillet until crisp, about 1 minute. Sprinkle the ham steaks with the capers, and serve the egg mixture on the side to spoon on top.

- Halve and seed the honeydew melons. Cut 2 (1/4-inch) slices from each honeydew melon half. Shape the honeydew slices to look like the egg white of a sunny-side-up egg. Slice the cantaloupe in half and use a melon scoop or a measuring tablespoon to carve out 4 "yolks".
- Trim the melon balls to resemble yolks. Assemble "eggs" and position 2 strips of prosciutto "bacon" alongside them. Garnish with parsley and serve immediately, or refrigerate. For the best contrast, use solid-color plates that are neither white nor yellow.

- Preheat oven to 300°F.
- Arrange 11 whole graham crackers on an un-greased 15 x 10 inch jelly roll pan.
- Bring butter, sugar, and nuts to a boil in a medium saucepan, and boil 2 minutes.
- Pour mixture over the graham crackers, spreading quickly to cover.
- Bake for 12 minutes.
- Remove crackers to wax paper to cool.
- Cut with a knife along perforations and serve.

- Preheat oven to 450°. In a large bowl, whisk the first 5 ingredients. Cut in butter until mixture resembles coarse crumbs. Stir in ham and green onions. GREEN ONION BISCUITS
Steps:
- Preheat oven to 425°F. Mix flour, baking powder, salt and pepper in large bowl. Mix cream and green onions in medium bowl. Add cream mixture to dry ingredients. Stir until moist clumps form.
- Transfer dough to floured work surface. Knead just until dough holds together, about 8 turns. Shape into 8-inch square. Cut out sixteen 2-inch square biscuits. Transfer biscuits to large baking sheet, spacing 1 1/2 inches apart. Brush top of biscuits with melted butter. Bake biscuits until golden and cooked through, about 18 minutes. Serve warm. (Can be made 8 hours ahead. Cool. Wrap in foil. Store at room temperature. Rewarm wrapped biscuits in 350°F. oven until heated through, about 8 minutes.)
HAM BISCUITS

Steps:
- Preheat oven to 350 degrees. In a large mixing bowl, combine 2 cups flour, baking soda, salt and baking powder. Mix well. Add the butter and buttermilk, and knead lightly by hand to make a cohesive dough.
- Sprinkle a work surface with flour, and turn the dough onto it. Knead with the heel of the hand about six times; do not overhandle. Roll out into a flat circle about 3/4-inch thick. Use a Champagne flute or biscuit cutter to press into 12 circles about 2 to 2 1/2 inches in diameter. If desired, reroll the scraps of dough to make into biscuits.
- Arrange the biscuits on a cookie sheet, and bake until lightly browned, 12 to 14 minutes. Remove from heat and cool slightly. To serve, split the biscuits in half and butter each cut side. Insert a slice of ham between the halves, and close. If desired, reheat in the oven for 2 to 3 minutes. Serve warm.
