Steps:
- In a large bowl, combine the romaine lettuce, oranges and green onions.
- Heat 2 tablespoons sugar with the almonds in saucepan over medium heat. Cook and stir while sugar starts to melt and coat almonds. Stir constantly until almonds are light brown. Turn onto a plate, and cool for 10 minutes.
- Combine red wine vinegar, olive oil, one tablespoon sugar, red pepper flakes and black pepper in a jar with a tight fitting lid. Shake vigorously until sugar is dissolved.
- Before serving, toss lettuce with salad dressing until coated. Transfer to a decorative serving bowl, and sprinkle with sugared almonds.

- In a large bowl, combine the Romaine, drained oranges, and chopped onions.
- Heat sugar and almonds in a pan over medium heat until sugar melts and coats almonds; stir and heat until almonds are slightly brown.
- Turn onto plate and cool for 10 minutes.
- Combine remaining ingredients in a jar with a tight fitting lid; shake vigorously.
- Pour salad dressing over lettuce mixture; toss.

Steps:
- Heat sugar and almonds in pan. Stir constantly until sugar turns golden brown. Don't let scorch!
- Let cool on a plate and break into pieces.
- Wash lettuce cut into bite size pieces. Add the celery, green onions, drained oranges and sliced strawberries in a salad bowl and toss.
- Combine the dressing ingredients and shake until everything is dissolved.
- Add almonds and dressing when it's time to serve.

SWEET AND CRUNCHY GARDEN SALAD

- Mix the almonds with 1/4 cup of the sugar in a medium saucepan. Cook over medium heat, stirring as the sugar melts and the almonds brown. Carefully spread the almonds on an ungreased baking sheet to cool, using a metal spatula; the nuts will be very hot. When completely cooled, break the candied almonds into tiny pieces.
- Tear the iceberg and romaine lettuce into pieces and transfer them to a salad bowl. Cover and refrigerate if not serving immediately.
- Combine the oil, vinegar, remaining 1/4 cup sugar, and the parsley, salt, pepper and cayenne in a bowl, and mix well. Chill covered, in the refrigerator, until ready to serve.
- Combine the lettuce, sliced green onions, candied almonds and orange segments in a large salad bowl. Just before serving, toss the salad with enough dressing to coat the greens.

- In a small skillet over medium heat, cook almonds and sugar, stirring constantly until almonds are coated and sugar has dissolved. This burns easily ,so stir constantly. It may take about 10 minutes, depending on the heat of your burner. Cool almonds. (These may also be made ahead and stored for future use.)
- Combine lettuce, celery and onions in a large bowl. (If you want to make ahead, I always line the bowl with a paper towel. Add the lettuce. Cover the top of the bowl with a paper towel and store in the fridge until ready to use. Add chopped celery and green onions before serving.)
- Combine all dressing ingredients together . Shake or whisk until sugar is dissolved. Chill until ready to toss salad.
- When ready to serve add almonds and oranges and toss with the dressing. (This is also great with feta cheese, or slices of chicken if you choose to make this a main course.)
