- Preheat oven to 350°. Place tomato slices in a single layer on paper towels; sprinkle with salt. Let stand for 5 minutes; pat dry., In a shallow bowl, whisk egg whites until foamy. Place flour in a separate shallow bowl. In another shallow bowl, combine bread crumbs, Parmesan cheese, garlic powder and basil., Coat tomato slices in flour, then dip in egg whites and coat with bread crumb mixture. Place on greased baking sheets. Bake, uncovered, 35-40 minutes or until lightly browned, turning once., Spread 1-1/2 cups spaghetti sauce into a greased 11x7-in. baking dish. Top with half of the tomatoes and spread with ricotta cheese. Sprinkle with 1-1/2 cups mozzarella cheese. Layer with remaining tomatoes, spaghetti sauce and mozzarella cheese., Bake, uncovered, 35-40 minutes or until bubbly and cheese is melted.

- Lightly sprinkle tomatoes with salt; drain on paper towels for 30-60 minutes. Meanwhile, combine cornmeal, Parmesan, flour, garlic salt, oregano and pepper in a shallow plate. Dip each tomato slice into egg, then into cornmeal mixture. , In a medium skillet, heat oil over medium-high. Fry tomatoes, a few at a time, for 2 minutes per side or until golden brown. Drain on a paper towel-lined wire rack. Serve immediately.

- Cook the green beans in a large pot of boiling water until just crisp-tender, about 3 minutes. Drain and rinse in cold water. Drain well; set aside.
- Melt the butter and oil in a heavy, large skillet over medium heat. Add the shallots and garlic and saute until tender, about 2 minutes. Add the tomatoes and cook until heated through, about 3 minutes. Add the beans and cook until the juices evaporate and the beans are almost tender, stirring often, about 10 minutes. Stir in the wine and basil. Simmer 2 minutes longer. Season with salt and pepper, to taste. Transfer to a serving bowl, and serve.
- Preheat oven to 400 degrees F.
- Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2-inch apart.
- Bake for 3 to 5 minutes or until golden and crisp. Cool.
- Yield: 8 to 10 crisps

- Preheat the oven to 350 degrees F.
- Render bacon in a large skillet over medium heat. Transfer the cooked bacon to a paper towel lined plate. Add the bread crumbs to a small bowl. Remove 2 tablespoons of the bacon fat from the skillet and stir into the bread crumbs. Add the onion rounds to the skillet in batches and cook, without breaking the round slices apart, until there is some golden color, about 5 to 6 minutes per side.
- To assemble the gratin, overlap the green tomato slices in 1 row in a large baking dish, about 9 by 11 inches. Next, make a row slightly overlapping of the partially cooked onion rounds, being careful to keep the slices intact. Repeat steps until all tomatoes and onions are used. Season tomatoes and onions lightly with salt and heavily with pepper. Crumble the bacon over the vegetables; sprinkle the grated Cheddar over the top followed by the bread crumbs. Bake until the cheese is bubbly, about 30 to 45 minutes. If the top is getting too brown, loosely cover with foil.

- Preheat oven to 350 degrees F (175 degrees C).
- Whisk eggs in a small bowl until smooth. Pour bread crumbs into a shallow dish. Dip each tomato slice in egg and coat with bread crumbs. Arrange on baking sheets in a single layer.
- Bake in the preheated oven until golden, about 5 minutes per side.
- Pour 3 cups spaghetti sauce into the bottom of a 9x13-inch baking dish. Top with a layer of tomato slices. Layer half of the mozzarella cheese and Parmesan cheese on top. Repeat layers with remaining spaghetti sauce, tomatoes, mozzarella cheese, and Parmesan cheese. Sprinkle basil on top.

- Combine flour, onion powder, granulated garlic, salt and pepper.
- Mix well.
- In separate bowl combine panko and Parmesan.
- In third bowl combine eggs and mustard.
- Take slices of tomato and dip in flour, dust off excess.
- Then dip in egg mixture, letting excess drip off.
- Finally dip in parmesan/panko mixture, pressing parmesan mixture onto slices for good coverage.
- Repeat until all slices are breaded.
- These should be stored in a single layer dusted lightly with extra crumbs.
- Heat olive oil in non-stick frying pan, over medium-high heat.
- Place 3 slices (1 order) in pan, and let cook about 1 1/2- 2 minutes on each side, until just golden brown.
- Don't flip too soon or parmesan mix will fall off.
- Serve.

- Prepare tomato sauce, set aside.
- In a small bowl combine milk, 1 egg, 1/4 teaspoons salt, and 1/4 teaspoons pepper. Place the flour in a pie plate or shallow bowl. and bread crumbs in another pie plate.
- Dip tomato slices in flour; then dip the floured slices in the milk/egg mixture and immediately into the bread crumbs to coat.
- In a large skillet, heat the oil. Fry the tomato slices in hot oil until browned; drain on paper towels.
- In a medium bowl, combine cottage cheese, Parmesan cheese, the remaining egg, the remaining 1/4 teaspoons slat, and 1/4 teaspoons pepper.
- Heat oven to 350*F.
- In a 9" square baking pan, spread a thin layer of tomato sauce to coat bottom.
- Place one third of lasagna noodles, side by side, in a single layer over sauce to cover bottom of pan.
- Place half of fried tomatoes in a single layer over noodles; cover with a layer of sauce.
- Top sauce with another layer of noodles then evenly spread the cheese mixture over the noodles.
- Top cheese layer with remaining noodles and remaining fried tomatoes.
- Spoon remaining sauce over tomatoes and sprinkle with the mozzarella cheese.
- Place the baking pan on a cookie sheet. Bake 30-35 minutes or until cheese melts and sauce is bubbly.
- Cool in pan on wire rack 5 minutes. Serve immediately. Enjoy!

- To make the sauce: In a small bowl, whisk together mayonnaise, buttermilk, horseradish, Parmesan, sour cream and ranch dressing mix. Cover and refrigerate until ready to serve. Can be made up to 1 week in advance.
- To make the tomatoes: In a large skillet or Dutch oven, heat 1/2-inch oil over medium-high heat until it reaches 350 degrees. Line a plate or wire rack with paper towels.

- Slice the tomatoes about a 1/2'' or about 2 millimetres thick. Medium tomatoes cook best if you trim the top and the bottom off and then slice them in half.
- Dip each slice of the tomatoes into flour, shake off the excess.
- Dip each slice into the beaten egg and then lay onto the parmasan, turn them over to coat each side
- Fry the tomatoes in hot, but not smoking, fat. Turn after a few seconds to seal both sides. Reduce the heat and cook gently
- Turn the slices occasionally during cooking. Cook to your taste. I do them still firm.
