FRENCH ONION GRILLED CHEESE

Steps:
- Melt the butter with the olive oil in a heavy-bottomed pot over medium-high heat. Add the onions, season with salt and pepper and spread the onions in an even layer. Cover the pot and turn down the heat to medium low. Sweat, steam and soften the onions, 10 to 15 minutes. Uncover and continue cooking until caramelized, 25 to 30 minutes, stirring frequently. Add the sherry and scrape up any bits from the bottom of the pan. Stir in the thyme and season with salt and pepper.
- Preheat a griddle to medium-low heat. Put 1 slice white American cheese on 4 slices country white bread and 1 slice yellow American cheese on 4 more bread slices. Divide the onions between half the bread, then close and butter both sides. Place the sandwiches on the griddle; cover with a metal bowl (careful, it will get hot) and let the sandwiches get nice and golden brown, 2 to 3 minutes. Flip, cover again and cook until the cheese is melted and the sandwiches are golden brown, 2 to 3 minutes.
GRILLED CHEESE WITH CARAMELIZED ONIONS

- Heat the canola oil and 1 tablespoon butter in a large saute pan over medium heat. When the butter is melted, add the onions and cook, stirring occasionally, until dark brown and caramelized, about 25 minutes. Add the vinegar, sugar and 2 tablespoons water, scrapping up any dark bits that have accumulated on the bottom of the pan. Continue to cook until all the liquid has evaporated. Transfer the onions to a bowl and reserve.
- Butter 1 side of each bread slice. Lay 6 slices butter-side down on a work surface. Top each with 2 slices of Gruyere, a dollop of the onions and 2 more slices of Gruyere. Top with another slice of bread, butter-side up.
- Heat a cast-iron griddle over medium heat. Add the sandwiches and cook until the cheese begins to melt and the bread is golden brown, 2 to 4 minutes. Flip and continue to cook until golden brown and the cheese is melted through, 2 to 4 minutes. Cut in half and serve immediately.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch casserole dish.
- Heat 2 tablespoons of butter in a large skillet over medium heat. Stir the onions into the pan; cook and stir until very soft and golden brown, about 15 minutes. Stir in sherry vinegar. Transfer to a small bowl, and reserve.
- In the same skillet, melt 2 more tablespoons butter. Whisk in 2 tablespoons flour. Stirring constantly, cook over medium heat until the flour smells like baked pie crust, about 3 minutes. Slowly whisk in milk, about 1/2 cup at a time, then whisk in nutmeg, cayenne pepper, and thyme. Bring to simmer, and cook until thickened, whisking constantly, 3 more minutes. Transfer to a bowl and reserve.
- Melt remaining 2 tablespoons butter in clean skillet; stir in panko until all crumbs are coated; reserve.
- Bring a large saucepan of salted water to a boil over medium heat, and boil beans until bright green and crisp but not raw tasting, 3 to 4 minutes. Drain very well.
- Spoon half of the caramelized onions into the prepared casserole dish; top with green beans. Season with salt and black pepper. Spread reserved white sauce over the green beans; sprinkle with half of the Gruyere cheese. Top with the rest of the onions, and use the back of a spoon to push onions down into sauce and cheese. Top with the buttered panko crumbs, the remaining Gruyere, and Parmesan cheese.
- Bake in the preheated oven until hot throughout and lightly browned, about 30 minutes. Let sit 10 minutes before serving.

- Use a fork to mix flour and boiling water in a large bowl. Knead dough into a ball. Cover bowl with plastic wrap; let dough rest for 30 to 60 minutes.
- Evenly divide dough into 16 pieces. Roll each piece into a 1/4 inch thick circle. Brush each circle with oil, season with salt and pepper, and sprinkle with about 1 teaspoon of green onions. Roll up, cigar style; coil each pancake and pinch open ends together to form a disc. Roll each circle flat to about 1/4 inch thickness.
- Heat 2 teaspoons oil in a large skillet. Fry cakes until golden brown, about 2 minutes on each side. Add more oil between batches, if necessary.

- Heat 1 tablespoon butter in a medium skillet over medium heat. Add the onions and sprinkle with the thyme, 1/2 teaspoon salt and several grinds of pepper. Cook, stirring occasionally, until the onions are browned and tender, about 20 minutes. Turn off the heat and stir in 1 tablespoon of the Dijon mustard and 1 tablespoon water to coat the onions. Transfer to a bowl and set aside.
- Heat a griddle over medium heat.
- Buzz the Cheddar, Gruyere, Robiola, prosecco, parsley, garlic and remaining 1 teaspoon Dijon mustard in a food processor until combined but still chunky and spreadable. Evenly spread the cheese mixture over one side of each slice of bread. Top 2 slices with the onion mixture and then sandwich the onions with the other 2 slices, cheese-side in. Spread the remaining butter on the outside of each sandwich and season with salt and pepper. Griddle the sandwiches over medium heat until golden brown on the first side, about 5 minutes. Flip and continue to cook until the cheese is melted and the exteriors are crispy, about 5 minutes more.
THE GREEN ACRE GRILLED CHEESE

- Preheat oven to 400 degrees F.
- Heat an oven-safe skillet over high heat. Add olive oil, red pepper, and onions. Sauté 3 minutes. Add mushrooms and sauté additional 3 minutes. Season with salt and pepper. Place skillet in oven and roast 15-20 minutes.
- Heat a sauté pan over medium-high heat. Add 1 tablespoon butter, a splash of water, spinach, and a pinch of salt and pepper. Cook just until spinach is wilted. Reserve.
- For béchamel sauce: Heat saucepan over medium heat. Add 1 tablespoon butter and minced shallot or onion. Season with salt and pepper; stir for about 3 minutes, or until translucent. Add flour and stir to coat. Stir in the milk, a little at a time to avoid lumping. Add nutmeg and cayenne and bring to a low simmer, stirring often to keep from sticking. Cook at least 10 minutes; stir in mustard and let stand off heat.
- Heat skillet or sauté pan over medium heat. Butter one side of each bread slice or roll and place 4 slices, butter-side down, in pan. Top with slice of Gouda, 2 tablespoons spinach, and 1/2 cup of peppers-onions-mushrooms. Top with 2 tablespoons of the béchamel sauce, another slice of Gouda, and a slice of rye, butter-side up. Grill to melt the cheese and toast the bread to golden brown, flipping sandwiches once.
HOMEMADE CHIVES GREEN ONIONS CREAM CHEESE
I'm a fan of bagels with scoops of whipping cream cheese! Unfortunately it is very unhealthy so I found this alternative and love it! I get this yogurt in a local Indian grocery store, and I'm sure you can find it in any Parkistini, Middle Eastern or Greek grocery stores as well. This type of yogurt is much richer and thicker. Please be sure to use whole-milk but not fat-free yogurt. I like my creamy cheese to have very strong flavor so I put extra amount for this recipe but you may adjust to half to your liking.

IRMA'S CREAM CHEESE GREEN ONION CHIP DIP
My mom, Irma, passed away 2 years ago, and this was one of my favorite "treats" that she made. She never liked sour cream dips, but she loved cream cheese. She found/made up this recipe before I was born. Christmas, Easter etc., a family party just wasn't a party without this dip and lots of potato chips! When I brought my boyfriend(now husband) to the first family party, he wasn't too impressed with the dip, as he was used to the saltier, stronger tasting sour cream onion soup mix dip. But now he loves it! He uses it on everything when I make it! He likes it on potato chips, of course, but also on hamburgers, hotdogs, bagels, crackers and even veggies. It has a smooth, creamy texture that enhances other foods instead of overpowering them. One of my sisters uses the basic recipe and then adds a can of drained baby shrimp-if you like shrimp, you'll love that. Other family members add garlic or other spices. I'm submitting the basic recipe that Mom used, with my addition of Bon Appetit, as that is my favorite way to do it. I hope you enjoy this as much as our family does! P.S. you can use low/no fat or Neufchatel cream cheese for fewer calories, and it still tastes good.

- Put cream cheese in mixer bowl to soften.
- Clean and remove roots, then slice green onions thinly. Use all the white tips, most of the light green parts, and slice two or three using the dark green tops for some color. It should be 1/4-1/2 c of onion bits, to your taste. Set aside.
- Start beating cream cheese with mixer, adding milk slowly, until the mixture is smooth and creamy. You may need more or less milk to get the consistency you want.
- Add Bon Appetit using more or less, to your taste and/or any other spices or herbs you want to use.
- Add green onions and mix until they're evenly distributed. Taste and add more seasoning or more milk, as needed.
- If you add shrimp, do it last, so they don't get too broken up.
- Chill for 1-2 hrs or overnight to let the flavors blend-that never happens at our house, lol, but it does taste better the next day if you can wait!
- In a pinch, I have used regular onions, chopped fine. I have even used dehydrated onion flakes, soaked in the milk. This is a very versatile and forgiving recipe. Have fun with it!

- Place 1 cup warm water in bowl of heavy-duty mixer. Sprinkle yeast over. Stir to dissolve yeast. Let stand 10 minutes. Mix in 1 cup flour. Cover bowl with plastic wrap. Let sponge stand in warm draft-free area until foamy and doubled in volume, about 1 hour.
- Add 1/4 cup olive oil, 2 1/2 teaspoons salt and remaining 3/4 cup water to sponge. Using paddle attachment, beat on lowest speed until blended. Gradually add 3 1/4 cups flour, beating until dough comes together, about 5 minutes (dough will be moist and sticky). Cover bowl with plastic wrap and towel. let dough rise in warm draft-free area until doubled in volume, about 1 hour.
- Brush 2 heavy large baking sheets with oil. Transfer dough to lightly floured surface. Sprinkle with just enough flour to keep dough from sticking. Divide dough into 8 equal pieces. Shape each piece into ball; flatten each ball into disk. Transfer disks to prepared baking sheets. Let rise 30 minutes.
- Preheat oven to 425°F. With lightly floured fingers, press dough disks all over, dimpling surface. Sprinkle disks with goat cheese, green onions, garlic and crushed red pepper, dividing equally. Drizzle each disk with 1 teaspoon extra-virgin olive oil, then sprinkle with coarse salt. Let rise 15 minutes.
- Bake breads until golden, about 30 minutes. Transfer breads to racks. Brush each bread with 2 teaspoons olive oil. Serve focaccia warm.

- Add cheese and green onions and toss with fork.
- Beat half and half and egg to blend in small bowl.
- Stir egg mixture into dry ingredients and mix gently until dough forms.

GREEN ONION CAKES
These chewy fried Chinese flatbreads are delicious! They are common at fairs and festivals in Edmonton, Alberta, Canada where I lived for 5 years. They are commonly served with fiery hot Chinese chili garlic sauce that you can find at most grocery stores. If you're not into spicy food, you can serve this with plum sauce or sweet and sour dipping sauce instead. Although, these are lengthy instructions, the green onion cakes are pretty easy to make and well worth the effort. If you don't want to cook them all at once, you can freeze the uncooked cakes, then thaw and fry them as needed. If you freeze them, separate each cake with a small piece of wax paper.

- Add salt to flour in a mixing bowl and mix throughly.
- Add honey to hot water in a separate cup or dish until the honey melts and mixes with the water.
- Slowly add water/honey mixture into the flour while stirring the flour.
- Knead the mixture until smooth (approximately 5 minutes). If it is too dry add a little extra water. If it is too wet, add a little flour.
- Cover with plastic wrap and refrigerate for at least 1 hour.
- After at least an hour remove mixture and roll into a sausage shape and divide into 10 equal portions. You will work with one cake at a time so cover the others so they don't dry up.
- For each portion of dough, roll into a ball between the palms of your hands, then on a floured surface roll the dough out into a thin round pancake.
- Sprinkle the surface of the dough with green onions.
- Roll the pancake into a sausage shape, trapping all the green onions inside the dough.
- Roll the dough again along the length of the sausage to make a coil shape.
- With the coil still standing up on your counter top flatten it with the palm of your hand (if you flatten it with the coil lying flat on your counter, the onion cake will open up while cooking).
- Roll the dough into a circle about 5 inches in diameter and place to the side while you make the rest of the cakes.
- Heat up the oil in a frying pan or skillet at a medium heat and fry each cake, one side at a time, until it is light brown.
- Cut into quarters and serve with chili garlic dipping sauce.
