GRILLED SWEET ONIONS
These onions are so delicious, we prepare them all year long-on the grill in summer, or in an oven preheated to 350° for the same amount of time in winter. A small salad, a slice of bread, these grilled onions, and you've got a great light meal. -Mary Bilke, Eagle River, Wisconsin

GRILLED EGGPLANT, PEPPERS AND ONIONS
The happy mix of eggplant, peppers and onions is found throughout the Mediterranean. Cooking the vegetables over hot coals adds a welcome smokiness, but even a stovetop grill gives a hint of smoky flavor, so don't fret if you can't grill outside. This salad is meant to be served at room temperature. Feel free to make it up to 2 hours ahead.

CHARCOAL GRILLED BABY ONIONS WITH LIME
Steps:
- About 45 minutes before serving, light a charcoal fire and let it burn down to medium-hot. Carefully trim the root ends off the onion, trim 1/2-inch from the top, and cut away any withered outer leaves. Position the grill 4 to 6 inches above the coals and lay a double folded square of aluminum foil on one side of the grill. Brush the onions lightly with the oil and season to taste. Lay the white part of the onion on the grill over the fire and the green part on the foil. Lay a heavy cast iron skillet over them to press the onions down onto the grill, so they will have nice grill marks. Grill them, turning occasionally, for 7 to 13 minutes, depending on the size of the onions. They are done when the white bulb is browned and well marked, and the green tops are soft. Remove to a warm serving platter and squeeze a little lime juice over the top. Serve warm, accompanied by the remaining lime wedges.

- Heat a large nonstick skillet over medium heat. Add in the butter, and cook until the butter begins to foam. When it begins to foam, tilt the pan and scrape off all of the white foam until you are left with clarified butter.
- Reduce the heat to its lowest setting, and add in the onion slices (do not break apart the rings of onion).
- Leaving the pan uncovered, cook the first side for 30 minutes, then flip and cook the other side for another 15 minutes. At this point the onions should be soft enough to break apart the rings and cook in an even layer. After you have broken up the layers, add a pinch of salt. Continue cooking on the lowest setting uncovered for another 45 minutes, stirring roughly every 5-10 minutes. In the end you want the onions to be very soft with the slightest hint of firmness in the middle.

- Prepare your onions. Slice the root end off of your onions and peel the skin off of the exterior. Slice the onions into 1/2 inch thick slices, keeping the rings together. Discard the end slices on each onion.
- Skewer the onions. Carefully slide a metal skewer through the center of the onion slices. This is easier when you press the onions down onto a board with the palm of your hand and sliding the skewers into the onions parallel to the board. Repeat until all of the onions are on the skewers.
- Season the onions. Set the onions flat on a rimmed baking sheet. In a medium bowl, combine the ingredients for the marinade. Pour the marinade over the sliced onion, turning the skewers to coat the onions on both sides.
