ULTIMATE GRILLED CHEESE
Steps:
- Preheat the oven to 400 degrees. Arrange the bacon on a baking rack set over a sheet pan in a single layer and roast for 20 to 30 minutes, until nicely browned. Drain on a plate lined with paper towels and cut in 1-inch pieces.
- Meanwhile, combine the mayonnaise, mustard, Parmesan, salt, and pepper in a small bowl. Lay 12 slices of bread on a board and spread each one lightly with butter. Flip the slices and spread each one generously with the mayonnaise mixture. Don't neglect the corners!
- Grate the cheeses in a food processor fitted with the largest grating disk and combine. Distribute the bacon evenly on half the slices of bread. Pile 1/3 cup grated cheese evenly on top of the bacon and top with the remaining bread slices, sauce side down.
- Meanwhile, heat an electric panini press. When the press is hot, cook the sandwiches for 3 to 5 minutes in batches until the bread is toasted and the cheese is melted. Allow to cool for 2 minutes. Cut in half and serve warm.

- Preheat skillet over medium heat. Generously butter one side of a slice of bread. Place bread butter-side-down onto skillet bottom and add 1 slice of cheese. Butter a second slice of bread on one side and place butter-side-up on top of sandwich. Grill until lightly browned and flip over; continue grilling until cheese is melted. Repeat with remaining 2 slices of bread, butter and slice of cheese.

GRILLED CHEESE SANDWICH
The trick to great grilled cheese sandwiches isn't in the ingredients, but on the stove. Achieving a golden, crusty outside and oozy inside takes a little patience: if the heat is too high, the outside will scorch before the cheese melts. Cooking the slices separately at first gives the cheese a good head start. There's no need to search out artisanal loaves or local cheese (though they won't hurt), but definitely do not use homemade mayonnaise. Mustard, chutney or even strawberry jam (believe it) can be dabbed on the cheese as it melts, or add ham, prosciutto or slices of apple or tomato (drain on paper towels first). You can use any melting cheese, such as American, Muenster or Swiss, but not too much: part of the perfection here is in the proportion of bread to cheese.

- Heat a heavy pan over medium-low heat.
- Thinly spread one side of each bread slice with butter. Spread the other side of each slice with mayonnaise and place the bread, mayonnaise-side-down, in the pan. Divide the cheese evenly on top of the buttered slices. Adjust the heat so the bread sizzles gently.
- When the cheese is about halfway melted, use a spatula to flip one slice over on top of the other, and press lightly to melt. Keep turning the sandwich, pressing gently, until the sandwich is compact, both sides are crusty, and the cheese is melted.

- Position rimmed baking sheet on a rack in middle of oven and preheat to 450°F. Spread about 1 1/2 tsp. mayonnaise on one side of each slice of bread. Arrange 6 slices, mayo side down, on second inverted rimmed baking sheet. Mound 1/2 cup cheese in the center of each slice, season with salt and pepper, and top each with remaining bread slices, mayo side up.
- Using oven mitts, carefully remove preheated baking sheet from oven and place, rimmed side up, on top of sandwiches, then, holding both rimmed baking sheets together, return to oven. Bake until bread is browned and cheese is melted, about 15 minutes. Carefully remove baking sheets from oven and transfer sandwiches to a cutting board. Cut into pieces and serve.
