Steps:

  • 1. Rinse the chicken wings under cold running water, then drain and blot dry with paper towels. Make 2 or 3 deep slashes, to the bone, in the meaty part of each wing. Set aside while you prepare the marinade.2. Combine the soy sauce, honey, ginger, garlic, scallions, and five-spice powder in a large bowl and whisk until the honey is dissolved. Set aside about half the marinade in a small covered bowl and refrigerate until ready to grill. Add the wings to the remaining marinade and turn to coat completely. Cover and let marinate, in the refrigerator, for at least 6 hours but preferably 24, turning the wings occasionally.3. Preheat the grill to medium-high.4. When ready to cook, drain the chicken wings, then thread each wing on a skewer, running the skewer through all three sections to hold the wing open as wide as possible. Oil the grill grate and arrange the wings on the hot grate. Grill, turning with tongs, until the thicker wing sections are no longer pink near the bone, 12 to 16 minutes in all, brushing the wings as they cook with the reserved marinade. Don't baste during the last 3 minutes of grilling.5. Transfer the wings to a serving platter and serve at once.Makes 12 whole wings serves 4 to 6 as an appetizer

Heat the honey just to warm in a small saucepan on the side burner of the grill, if you have one, or over low heat on the stovetop. Thread each chicken wing on a skewer, running the skewer through all three sections to hold the wing open as wide as possible. Arrange the wings on the hot grate and grill, turning with tongs, until the thicker wing sections are no longer pink near the bone, 12 to 16 minutes in all, brushing the wings during the last 4 minutes of grilling with the warm honey.4.   • Let marinate in the refrigerator for at least 5 hours. If you let them marinate overnight, all the better! When the wings are done marinating, fire up your grill. Let it get pretty hot--if your grill has one of those fancy thermometers, let it get all the way up to max heat.
  • Grilling is a rather inexact science, so let your resident grillmaster handle these. I'm happy to say that in recent years, I've very nearly usurped my dad--at least when it comes to wings! If you're a grilling novice and need a few more tips, though, here's how I cook them:
  • Place the wings on the grill, topside down. After about 3-5 minutes, you can turn them 90 degrees to brown them evenly. Close the grill to let them cook through as well. Though you should only close the grill for 45-60 seconds at a time, as grease flare-ups can occur pretty easily with wings. When the top of the wing is thoroughly grilled (you'll know it by the golden, lightly crisped and charred skin), flip the wings. Lower the heat to medium/medium high, and repeat these steps until the wings are cooked through, periodically closing the grill to let them cook through. Some wings will cook faster than others, so you can place those on indirect heat while the rest finish up.
