Italian sausage, bell peppers, and onions made easy on the grill. You can also serve the sausage in hot dog buns and finely chop the veggies once grilled as a "relish". I like to add a squirt of mustard when I serve them this way.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Combine bell peppers and onions in a large bowl. Add olive oil, Italian seasoning, salt, and pepper. Stir to combine. Using a toothpick, poke 4 holes into each sausage to prevent them from exploding on the grill.
- Place vegetables in a grill basket and cook for 2 minutes. Add sausage directly to the grate and grill for 4 minutes. Flip sausage over, stir vegetables, and grill for 4 minutes more.

- In a small non-stick skillet cook and stir almonds for 1-2 minutes, or until golden. Stir in raisins and remove from heat. Let stand for 1 minute. Carefully stir in vinegar, sugar, salt and black pepper. Return to medium-low heat, cook and stir just until sugar is dissolved, 2 minutes. Set aside. In a large bowl combine red and green peppers and onion wedges. Drizzle with oil; toss gently to coat. Prepare grill to medium-high heat. Grill sausages and vegetables uncovered for 10-15 minutes until sausages are firm, no longer pink inside and juices run clear (180 degrees F),and vegetables are tender, turning at least once halfway through grilling. While sausages and vegetables are grilling, brush slices of polenta with Italian dressing and grill about 2 minutes on each side allowing enough time for the slices to become toasted and golden. Return the grilled vegetables to the large bowl, add the almond mixture; toss gently to coat. Arrange the sausages on a large platter with the grilled polenta and the sweet and sour peppers.
GRILLED HOT ITALIAN SAUSAGE SANDWICH
My kids have always wanted these at a cookout. They are the regular-size hot Italian sausage, split before cooking, with peppers and onions on top in a homemade burger roll. Easy and so delicious. You put two sausages on a roll and then the topping.

- Put a little olive oil in a frying pan and put in the pepper and onions; cook slowly till just about done or whatever doneness you perfer them; put aside.
- Split the sausage down the center lengthwise and put on a platter.
- Microwave them till about three-quarters done.
- Then put them on the grill, open side down and grill; turn them over and finish grilling till done.
- Put sausage in a homemade bun and top with the onions and peppers.
- If you like pickled hot pepper, put these on, too; the kind that come whole in a jar.

This is a variation of Mysterygirl's panini recipe (Recipe #16432) that I came up with when I had a craving for Italian sausage. I must say that it turned out really great, but try it for yourself! Amounts are for one sandwich - just multiply as necessary.

Steps:
- Put sausage in small pot and cover with water.
- Bring to boil over high heat.
- Once water boils, prick the sausage with a fork several times so that the grease comes out as it cooks.
- Boil sausage for 5 minutes, or until it looks at least halfway cooked.
- Remove sausage from water, and either rinse it under warm water (there might be some scum on it), or wipe it with a clean paper towel.
- Preheat George Foreman grill.
- Slice sausage in half, lengthwise.
- Place sausage cut-side down on hot grill, and cook until done (about 5 minutes or so).
- Place cheese in bun, then add sausage, and top with roasted red peppers and/or your own favourite additions such as hot banana peppers, marinara sauce, olives, tomatoes, fresh basil, etc, etc.
- Close sandwich and grill in George Foreman until the bread is golden and crispy.
- Cut sandwich in half and enjoy!

- 1. Prick each sausage a half-dozen times with a needle or pin stuck in a cork. Arrange the onion slices on the bottom of a sauté pan just large enough to hold all the sausages. Place the sausages on top and add beer and water to cover (the ratio should be about 3 parts beer to 1 part water). Place the pan over medium heat and gradually bring the liquid to a simmer, not a rapid boil. Poach the sausages until half-cooked, 4 to 5 minutes. Transfer the sausages to a rack on a baking sheet to drain or drain in a colander. Separate the sausages into links.
- 2. Set up the grill for direct grilling and preheat to medium-high.
- 3. When ready to cook, brush and oil the grill grate. Lightly brush the sausages on all sides with oil and place on the hot grate. Grill until the casings are crisp and nicely browned and the sausages are cooked through, 4 to 6 minutes per side. You may want to rotate the sausages 90 degrees after 2 minutes on each side to create an attractive crosshatch of grill marks. Should flare-ups arise, move the sausages to a different section of the grill. Use a slender metal skewer to test for doneness. Insert it into the center of one of the sausages: It should come out hot to the touch.
- 4. Transfer the sausages to plates or a platter and let rest for 3 minutes. Serve with plenty of mustard.
- Variations: Poaching is optional and not every grill jockey does it. If you omit the poaching, you'll need to grill the sausages 7 to 10 minutes per side.
- For absolutely foolproof sausage grilling, use the indirect method. The sausages will be fully cooked in about 30 minutes.
