STEAK AND FRIES SALAD
This is a very popular dish at restaurants in central Pennsylvania. Prepared sweet-and-sour dressing is good on this salad, too. -Nancy Collins, Clearfield, Pennsylvania

SEASONED GRILLED FRIES
Steps:
- Cover the potatoes with cold water in a large saucepan and cook until almost tender. Drain and dry the potatoes. Cut each potato lengthwise into quarters. Grill the potato wedges for 3 to 4 minutes per side until golden brown. Serve with ketchup.
GRILLED STEAK FRIES
It's nice to have the option to deliver a full meal straight off of the grill, fries and all. Though not as crispy as the deep-fried variety, these hearty grilled steak fries are every bit as satisfying. It's vital to grill the potato slices with the skin on; the skin not only provides an extra textural dimension, but also keeps the potatoes from falling apart on the grill. You can simply season these with salt and pepper or use any of the seasoning mixtures for fries (pages 117 to 119), if you so desire.

- Place potatoes in a large pot then cover with at least 2" of cold water. Add salt then bring water to a simmer over high heat. Reduce heat to medium-low and cook about 40–45 minutes until tender but still firm. The potatoes must be cooked through, but still firm enough to hold their shape.
- Drain water and allow potatoes to cool until they can be handled. Cut each potato in half lengthwise, then continue cutting lengthwise into 1"-thick wedges.
- Preheat outdoor grill to medium-high or an indoor grill to high heat. Spray potato wedges generously with cooking spray then season all sides with garlic salt and grill until golden brown marks appear and potatoes are heated through—about 2 to 3 minutes per side on outdoor grill and about 8 minutes per side on indoor grill.
- Transfer to a serving platter then sprinkle with pepper and Parmesan cheese. Serve immediately.
