GRILLED SWEET POTATOES WITH SESAME DIPPING SAUCE

- 1. Preheat the grill to medium-high.2. Scrub the potato skins and blot dry with paper towels.3. When ready to cook, oil the grill grate. Place the sweet potatoes on the hot grate and grill, turning often with tongs, until very well browned and squeezably soft, 30 to 50 minutes.4. Meanwhile, prepare the sauce. Combine the soy sauce, sake, sugar, scallions, garlic, and sesame seeds in a small bowl and whisk until blended and the sugar is dissolved. Spoon the sauce into 4 small bowls or ramekins.5. Serve the sweet potatoes with bowls of sauce. To eat out of hand, simply dip the potatoes in the sauce and eat away. To serve as a side dish, cut open the potatoes and spoon the sauce over them.Serves 4

SPICY GRILLED SWEET POTATOES
Adapted from Cooking Light. A healthy and different way to eat sweet potatoes, and one of my favorites. Goes well as a side with grilled meats or sandwiches. I like this because it is quick, easy, tasty, and excepting the cilantro I almost always have all the ingredients on hand. On top of all that, it's healthy and low-calorie. What's not to like?

- Combine the spices in a small bowl (cumin, garlic powder, salt and red pepper). Mix.
- Put the sweet potato slices in a medium bowl and drizzle with olive oil. Toss to coat. Sprinkle with the spices and toss to coat evenly.
- Heat a stove-top grill or a large skillet over medium high heat. Remove briefly from heat, coat with cooking spray, and return to the heat. (The original recipe called for a grill, but I just use a skillet.).
- Place sweet potato slices in the skillet, flipping occasionally, so that they are grilled crispy on both sides. They take about 10 minutes to cook as long as they are properly sliced to a thin 1/4-inch thickness.
- When cooked, places in a serving bowl and sprinkle with the cilantro, if using. (The first several times I made this I had no cilantro, so did without. In the meantime I've made it with cilantro a few times, but it is just fine without it if you don't have any.).

- Make the sweet potato wedges: Preheat oven to 500 degrees. Toss sweet potatoes with oil and salt in a large bowl. Arrange in a single layer on a baking sheet. This recipe originally came from Quick Cooking. The time it takes to cook can vary a lot depending upon the heat of the fire, the size of the potato, or how you package it up. When we are in a hurry, I have even cut the potato into chunks and divided it up between four pieces of foil. It is super easy, healthy, and goes well with pork chops or Recipe#267975. When we go camping this is often on our menu. Sometimes I have put the honey on before grilling, and I think that is okay, too.

- Cut two pieces of heavy duty foil, about 18 X 12 inches; place a potato half onto each piece of foil.
- Spread cut side with butter.
- Sprinkle with salt and pepper.
- Fold foil over potatoes and seal tightly.
- Grill covered, over medium hot heat for 50 minutes, or until tender, turning once.
- To serve, fluff potatoes with a fork and drizzle with honey.

This is a very easy grilling recipe with easy tinfoil cleanup. I tried this on my family this weekend and they loved it. I think it may be a new Thanksgiving classic.

Steps:
- Slice and split your sweet potatoes and apple between two tinfoil packages (two strips of tinfoil folded together).
- Top each with half the butter and brown sugar and a few dashes of cinnamon (optional).
- Close the tinfoil packages and put on the grill on medium/low heat for approximately 40 minutes, turning half way through.
- Make sure you don't burn, brown sugar doesn't taste good burnt.
