Steps:
- Combine sugar and lime juice in a shallow dish, stir well.
- Add 1/2 cup raspberries and mash.
- Add peaches, turning to coat.
- Marinate at room temperature, cut sides down, 30 minutes to 1 hour.
- Remove peaches, reserving marinade.
- Coat grill rack with cooking spray, and place on grill over medium low coals.
- Place peaches, cut sides down in rack and cook 2 minutes.
- Turn peaches over, cook 15 minutes or until tender, basting once with half of reserved marinade.
- Remove from grill.
- Stir remaining 1/2 cup raspberries into remaining marinade and spoon over peach halves.

- Cut the peaches in half and remove the pit. Slice each half in half and toss them in a bowl with the vanilla extract, almond extract, and brown sugar. Set aside for 15 minutes while you preheat a grill with a medium-high heat. Grill skin side down until skin is slightly charred, about 3 minutes. Turn and grill on the other 2 sides until you get nice grill marks, about 1 minute on each side.
- Divide the peaches among 4 bowls and serve with the frozen yogurt and toasted almonds, if desired.
GRILLED PEACH SALAD WITH SPINACH AND RASPBERRIES
Right before your grilled entree comes off the grill, throw some peaches on for the salad. The caramelization adds a dimension of flavor and appearance to the peaches. Put them on a bed of fresh spinach, add raspberries and a good vinaigrette, and some almonds, too, for crunch.

- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Combine olive oil, balsamic vinegar, garlic, mustard, salt, and pepper in a small container with a lid. Cover and shake vigorously to combine dressing ingredients. Set aside.
- Brush peach slices lightly with avocado oil. Place peaches, cut-side down, onto the grill; cook until grill marks form, 1 to 2 minutes. Turn each slice and cook until grill marks form, 1 to 2 minutes more. Remove from grill
- Divide spinach between 4 salad plates. Top each salad with 4 grilled peach slices. Evenly distribute raspberries and top with some almonds. Drizzle each salad evenly with dressing.

- Puree 2 1/4 cups fresh raspberries along with 3 tablespoons water in food processor until puree is smooth. Strain raspberry puree through fine-mesh strainer, pressing on solids to release as much liquid as possible; discard solids in strainer. Stir in 3 tablespoons sugar and 1 tablespoon fresh lemon juice until blended. DO AHEAD Fresh raspberry sauce can be made 1 day ahead. Cover and refrigerate.
- Prepare barbecue (medium heat). Melt butter with brown sugar in heavy small skillet over medium heat. Remove skillet from heat. Brush peach halves all over with melted butter mixture. Grill until tender, about 8 minutes, turning occasionally. Serve with sauce.

- Combine sugar and cinnamon in shallow bowl and stir to mix, set aside.
- Cut each peach in half around crease to the stone.
- Twist halves in opposite directions to separate them.
- Pry out stone with spoon and discard.
- Lightly brush each peach half on both sides with melted butter.
- Have peaches and cinnamon sugar by grill side, ready for grilling.
- Set up grill for direct grilling and preheat to high.
- Brush and oil grill grate.
- Dip each peach in cinnamon sugar to coat both sides, brushing off excess.
- Place halves on grill and grill until caramelized (dark golden brown), 3 to 6 minutes per side, turning with tongs.
- Transfer to plates and serve peaches with whipped cream or ice cream.

GRILLED PEACHES

- Right before cooking, slice the peaches along the seam and pit them. Coat them in oil for cooking, being sure to give them a thick, even coating. I prefer to toss them in a gallon size Ziplock bag along with the oil and gently rub the oil into the peach. This reduces mess, which is critical when you might be in the backyard, far from access to a sink. Don't use extra virgin olive oil, as the smoke point is lower and may cause the peaches to taste burnt and smoky. Grill the peaches skin side up for 5-6 minutes. When they begin to sizzle and shine, turn them over onto their skin and cook for another 6-7 minutes, or until they soften and lose a little bit of their shape. Serve immediately, with or without a garnish of whipped cream or ice cream. If you don't have room to eat all the peaches you've grilled, they can be reheated in the microwave for about 30 seconds, and they still taste great the second time around.
