Halibut with Vegetables and Parsley image

Steps:

  • Preheat oven to 400°F. Sprinkle halibut with salt and pepper. Spread 1/2 tablespoon hot ajvar on each side of each fish fillet. Set aside.
  • Heat oil in heavy large ovenproof skillet over medium heat. Add carrots, potatoes and celery; sauté until tender, about 8 minutes. Mix in beans, clam juice, parsley, garlic and cup hot ajvar. Bring to boil. Season with salt. Arrange fish atop vegetable mixture in skillet. Cover and bake until fish is opaque in center, about 20 minutes.

4 6-ounce halibut fillets
1 cup hot ajvar
1/4 cup olive oil
1 cup diced carrots
1 cup diced potatoes
1 cup diced celery
1 cup canned Great Northern beans, rinsed, drained
1 cup bottled clam juice
1/2 cup chopped fresh parsley
1/4 cup minced garlic

Halibut Ceviche With Jalapeño and Parsley image

Steps:

  • Thinly slice one-third of jalapeño and place in a small bowl with orange juice and lime juice. Allow to infuse for 30 minutes. Meanwhile, dice remainder of jalapeño into 1/4-inch pieces and set aside. Dice halibut into 1/4-inch cubes, place in a bowl nesting in a bowl of ice, and refrigerate.
  • Strain infused juice, discarding sliced jalapeño. Season halibut lightly with a pinch of salt, or to taste. Add 1/4 cup juice to halibut, reserving remainder. Allow to sit (still resting in bowl of ice) for 5 minutes. Drain well.
  • Divide halibut among four chilled serving plates. Top each serving with an equal portion of reserved juice, diced jalapeño, parsley and a few drops of olive oil. Season to taste with salt, and sprinkle each plate with grated lime zest. Serve immediately.

HALIBUT ROASTED WITH GARLIC-PARSLEY BUTTER

It takes a very hot oven to roast this fish, and the results are incredible! The halibut is gently browned on the outside. You'd never be able to accomplish this "blast of hot air" in a conventional oven because the circulating heat hits everything at one time. Sometimes I add a few baby potatoes, scrubbed and quartered, or a quartered fennel bulb, tossed in melted butter and scattered around the fish. They'll be done at the same time as the halibut.

Halibut Roasted with Garlic-Parsley Butter image

Steps:

  • Position the oven racks so that the top rack is 5 to 6 inches from the top of the oven. Preheat the oven to convection roast at 500°F. Cover a shallow-rimmed roasting pan with foil and coat with nonstick spray.
  • Rinse the fish and pat dry with paper towels. Center it on the pan. Mix the butter, parsley, and garlic together. Brush the fish on both sides with the mixture.
  • Roast the fish for 10 minutes, until it flakes when tested with a fork. Brush with any remaining butter mixture and sprinkle with salt and pepper. Transfer it to a warm serving platter.

One 1 1/2-pound halibut fillet, thawed if frozen
8 tablespoons (1 stick) melted butter
2 tablespoons minced fresh flat-leaf parsley
2 to 3 garlic cloves, minced
Kosher salt and freshly ground black pepper
