SKELETON MEAT PLATTER

For meat lovers and the not-so-faint-of heart: This edible skeleton will likely bring a ghoulish chuckle from your guests.

Steps:

  • For the skeleton head: Cook the bacon in a medium nonstick skillet over medium-high heat until golden and crispy, 7 to 8 minutes. Use a slotted spoon to transfer to a paper towel-lined plate; set aside.
  • In a large bowl, combine the cream cheese, Cheddar, scallions, bacon, some salt and a few grinds of pepper and mix until fully incorporated.
  • On a piece of parchment, mold the cheese mixture with your hands into the shape of a skull, then wrap the head in the prosciutto. Make 2 divots for the eyes and place the olive halves in the divots. Pinch the middle of the face together to make a nose and create an indent below the nose to make a mouth. Refrigerate until firm, about 20 minutes.
  • For the skeleton body: Prepare a grill or grill pan for medium-high heat.
  • Grill the pepper whole, rotating occasionally, until charred on all sides and slightly soft, about 10 minutes. Cut the pepper from stem end to bottom on one side to create one long piece of pepper. Grill the sausage coil in one piece, flipping halfway through, until opaque and completely cooked through, 10 to 12 minutes.
  • To assemble: Position the skeleton cheese head at the top of a board or platter. Place the red pepper directly underneath the head and fold it slightly to create a heart. Align the baby back rib racks around the heart, one on each side, with the bony parts facing up to resemble a rib cage. Position the sausage coil under the rib cage to resemble intestines.
  • Fill the space around the intestines, heart and rib cage with the pulled pork, tucking it under as needed. Refrigerate until ready to serve.
  • Serve with sliced baguette and assorted crackers.

1 full rack cooked ribs, cut in half (about 13 ribs)
2 pounds cooked pulled pork (from two 1-pound packages)
Sliced baguette and assorted crackers, for serving

Steps:

  • Find a plastic skull or head. Spread cream cheese over all but the eyes and mouth. You can use BBQ sauce or cranberry sauce if you want a bloody effect in place of the cream cheese, but I prefer the taste of cream cheese with the meat.
  • For the lunch meat, ham is my favorite due to the flesh tones. (ewww, I know! that is the point here) :) Beef would be a good alternative as well but any meat will work. Slice pieces of meat and wrap over cream cheese covered head. Make sure not to cover the eyes or mouth area.
  • Great centerpiece to any Halloween bash!

FLAYED MAN CHEESE BALL

This is a cheese ball cleverly disguised as a skinned human face. So gross and yet SOOOooo good! Arrange crackers, pretzels, or any snacks you want around the face and serve with a knife!

Steps:

  • Lightly coat plastic face mask with cooking spray (see Cook's Notes). Line the face mask with plastic wrap, taking care to press it down fully into the nose and eyes.
  • Reserve two or three slices of prosciutto and set aside. Tear the remaining slices of prosciutto into strips and lay them into the mask to form the "muscle tissue." Start around the eyes, leaving eyes blank, and then create the cheeks, chin, and forehead.
  • Take the two whole green olives and position them in the eye holes, pimento side-down. Set the mask aside.
  • Combine the softened cream cheese, Cheddar, and Havarti cheeses in a mixing bowl. Add the chopped green olives and roasted red peppers. Use an electric mixer or clean hands to mix until thoroughly combined.
  • Take a heaping spoonful of the cheese mixture and arrange it to form an eye around one olive, and then the other. Gently lay handfuls of the cheese mixture all around the mask, taking care not to move the slices of prosciutto. Press the cheese down as you work to fill in all of the crevices. When the mask is full, gently press in the cheese mixture all around the mask. Refrigerate for at least 30 minutes.
  • Invert the mask onto a serving platter and gently remove the mask and the plastic wrap. You should be left with a gorgeous (and freaky) face. If there is cheese showing around the bottom edges, use the reserved prosciutto slices to cover it before serving.

Steps:

  • Cover a plastic skull with plastic food wrap.
  • Use thin slices of prosciutto to cover the plastic skull. Leave the eye sockets, nose hole and teeth uncovered.
  • Carefully make an incision on the plastic around the eye sockets. Insert pickled olives in the sockets to create the eyes.

Steps:

  • Heat oven to 350°F.
  • Unroll dough on lightly floured work surface; roll or flatten to 17x10-inch rectangle. Combine cheeses.
  • Cut 1 pepperoni slice to resemble a snake's tongue; set aside. Arrange remaining pepperoni slices over dough rectangle, leaving 1-inch border around all sides; top with spoonfuls of the cheese mixture. Roll up dough, jelly-roll fashion, starting at one long side; pinch seams together to seal. Place, seam-side down, in "s" shape on baking sheet sprayed with cooking spray to resemble snake.
  • Beat egg white and yellow food coloring lightly with fork; brush about half over dough. Add green food coloring to remaining egg white; brush randomly over dough to resemble a snake's splotched skin. Insert olives into one end of dough for the snake's eyes. Add pepperoni tongue.
  • Bake 30 to 35 min. or until golden brown. Meanwhile, heat pizza sauce just until warmed.
  • Serve calzone with the sauce.
