ASPARAGUS HAM STRATA
You can easily prepare this the night before for a luncheon, or in the morning for dinner. I serve it year-round for large groups, like my card and garden clubs, and make it for picnics and other occasions. - Using a doughnut cutter, cut 12 circles and holes from bread; set aside. Tear remaining bread in pieces and place in a greased 13x9-in. baking dish. , Layer with cheese, asparagus and ham; arrange bread circles and holes on top. Lightly beat eggs with milk. Add onion, salt and mustard; mix well. Pour egg mixture over bread circles and holes. Cover and refrigerate at least 6 hours or overnight. , Bake, uncovered, at 325° until top is light golden brown, 55 minutes. Let stand for 10 minutes before serving.

This cheesy strata makes a wonderful brunch dish that you can assemble the night before. You may use Ham Or Chicken in this recipe with Asparagus or Broccoli. Adapated from Better Homes & Gardens. Chill time is 2 to 24 hours not included in prep time.

Steps:
- In a greased 2-quart square baking dish spread half of the English muffin pieces.
- Top with ham, asparagus, and cheese.
- Top with the remaining English muffins pieces.
- In a bowl whisk together eggs and sour cream, Stir in milk onion, mustard, and 1/8 teaspoon black pepper.
- (If using chicken add salt.) Pour evenly over layers in dish.
- Cover and chill 2 to 24 hours.
- Bake, uncovered, in a 325 degree oven for 60 to 65 minutes or until internal temperature registers 170 degrees on an instant thermometer.
- Let stand for 10 minutes before serving.

Grandma knew how to make a hearty meal out of leftover bits of bread and cheese. This recipe is meant for riffing, so use any type of cheese, leafy greens, meat or bread you happen to have on hand.

- Position a rack in the center of the oven and preheat to 350 degrees F. Grease a 1 1/2 quart baking dish with butter or cooking spray.
- Whisk the eggs, milk, half-and-half, nutmeg, cayenne, 1 teaspoon salt and 1/2 teaspoon pepper together in a large bowl. Fold the greens, meat, bread and 1/2 cup of the shredded cheese into the mixture. Pour into the prepared baking dish and top with the remaining cheese.
- Cover with foil and bake for 35 minutes. Uncover and bake until the strata is puffed, golden brown at the edges and set in the center, about 15 minutes more. Let cool 10 minutes before serving.
CHEESY HAM AND MUSHROOM STRATA
Make this ham-and-cremini strata even more flavorful with a little Parmesan and a lot of Swiss cheese.

- Butter a 9-by-13-inch baking dish.
- Heat the oil in a large nonstick skillet over medium-high heat until hot. Add the mushrooms and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Season with salt and pepper. Set aside.
- Whisk the half-and-half, Parmesan and eggs, 1 1/2 teaspoons salt and a few grinds of pepper together in a large bowl.
- Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Swiss cheese, followed by the cooked mushrooms and the ham. Cover with the remaining bread cubes and pour the half-and-half mixture evenly over top. Cover with plastic wrap and refrigerate overnight. (This can also be assembled the day of; just let soak at room temperature 30 minutes to 1 hour before baking.)
- On the day of baking, preheat the oven to 325 degrees F.
- Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup Swiss cheese. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.

- Cook asparagus in a small amount of boiling salted water until tender crisp, about 2 to 3 minutes; drain and set aside.
- Place 6 slices of bread on the bottom of a greased 9x13-inch (3.5 L) baking dish, cutting the bread if necessary to fit the dish.
- Sprinkle half of ham, asparagus, chives, rosemary and cheeses over bread. Repeat with second layer ending with cheese.

- Spray a 13x9-inch (3-quart) glass baking dish with the cooking spray. Peel and thinly slice the green onions; you will need about 1/2 cup. Trim crusts from the bread.
- Arrange 6 bread slices in baking dish. Layer the ham, cheese and onions on bread in dish. Cut remaining bread slices diagonally in half; arrange on onions.
