HAM APPETILLAS

This is a wonderful tasting, easy appetizer recipe I got from a friend about 12 years ago. When she brought them to my house for a get together, I just had to have the recipe, and was pleased with how simple and easy they are to make. And I love anything that I can do ahead of my big day.

Steps:

  • Remove tortillas from regrigerator for about 30 minutes prior.
  • Combine creme cheese, mayonnaise, onions, and olives.
  • Spread thin layer of mixtures on tortilla.
  • Arrange four slices of ham over cheese.
  • Tightly roll up tortilla.
  • Wrap individually in plastic wrap.
  • Place in refrigerator for at least 3 hours.
  • or overnight.
  • Cut in 3/4 inch slices.

2 (8 ounce) packages cream cheese
1/3 cup mayonnaise
2 tablespoons chopped onions
1/4 cup chopped black olives
2 (2 1/2 ounce) packages sliced pressed cooked ham

Steps:

  • warm tortillas a little in microwave to soften.
  • Combine cream cheese, mayo, onions, and olives. Spread thin layer on each tortilla.
  • Arrange four ham slices over cheese mixture. Tightly roll up and wrap in plastic wrap.
  • Refrigerate at least 3 hours or overnight.
  • To serve, cut into 3/4" diagonal slices.
  • Makes about 64 pieces.
  • Options: can sub mayo and ham and add 1/2 cup salsa.
  • Note: cook time is refrigeration time.

Steps:

  • Combine cream cheese, salad dressing, onions and olives. Spread thin mixture on tortilla. Arrange 4 ham slices over mixture. Tightly roll tortilla. Wrap individually in plastic wrap. Place in refrigerator at least 3 hours or overnight. To serve, cut into 3/4 inch slices. Crab Appetillas Omit olives and ham. Add 1/4 cup chopped red pepper and 1 cup shredded cheddar cheese and 5 ounces of crab meat. Imitation crab can be used.

1 package super size flour shells
2 - 8 ounce packages of cream cheese
1/3 cup salad dressing
2 tablespoons green onion chopped
1/4 cup black olives chopped

BAKED CRAB QUESADILLAS APPETIZERS

Unlike most quesadillas, these are baked, not fried. These are also cut into thirds for appetizers, but if you'd like, leave them whole and have them for a meal! I love crab, and I love cheese. I also tend to like flour tortillas! So this is something that worked out well in my appetizer repertoire!

Baked Crab Quesadillas Appetizers image

Steps:

  • Combine butter and oil; set aside.
  • Saute onion, peppers, and garlic in 2 tbsp reserved butter mixture in a medium saucepan over medium heat, stirring constantly until tender. Remove from heat. Gently stir in crabmeat and next 3 ingredients.
  • Place on tortillas on baking sheets; brush 1 side of each tortilla with remaining butter mixture. Turn tortillas over; spread crabmeat mixture evenly over half of each tortilla, and sprinkle with cheese. Fold tortillas in half.
  • Bake at 475 degrees for 4 minutes or until golden. Cut each tortilla into thirds. Serve warm.

Steps:

  • Separate biscuits.
  • Divide each biscuit into 3 parts.
  • You will end up with 30 pieces.
  • Place on a cookie sheet and bake 8-10 minutes.
  • Spread generously with cream cheese.
  • Sprinkle with seasoning salt.
  • Top with crab meat.
  • Top with grated cheeses.
  • Sprinkle with dill.
  • Bake or broil until cheese is melted.

Creamed Lump Crab Meat With Country Ham image

Steps:

  • Pick over the crab to remove any traces of shell or cartilage.
  • Heat 1 tablespoon of the butter in a heavy skillet. Add the curry powder and the scallions. Cook, stirring, until wilted. Add 2 tablespoons of the sherry and cook briefly.
  • Add the cream, half-and-half and Worcestershire sauce, and salt and pepper to taste. Bring to a boil and simmer for 5 minutes. Set aside. Keep warm.
  • In a nonstick skillet, heat the remaining butter, and add the crab meat and the remaining sherry. Heat briefly without stirring, and remove from the heat.
  • Add 1/4 cup of the hot cream mixture to the egg yolks. Stir well with a whisk to blend. Return this mixture to the sauce, stirring rapidly. Remove from the heat.
  • Spoon the sauce over the crab meat.
  • Preheat the broiler and prepare the toasts.
  • Heat the ham under the broiler and place the toasts on serving dishes. Add the ham slices. Top with the crab meat and the cream sauce, dividing evenly. Serve with lemon wedges.
