Steps:
- Heat grill. In small saucepan, combine all ingredients except ham steak. Cook over low heat until jelly is melted, stirring occasionally.
- When ready to grill, oil grill rack. Place ham steak on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Brush with jelly mixture. Cook 8 to 10 minutes or until thoroughly heated, turning and brushing once with jelly mixture. Serve with remaining jelly mixture.

Steps:
- In a large skillet, saute onion and pepper in butter until crisp tender. Remove from pan and set aside.
- Cut ham steak into 4 pieces and in the same skillet, brown ham on both sides.
- While ham is browning, in a small bowl, combine the cornstarch and apple juice until smooth; then pour over ham.
- Bring juices to a boil and cook while stirring for 1-2 minutes or until slightly thickened.
- Reduce heat and spread apple butter over ham.
- Top with sauteed onion.
- Cover pan and simmer for 5-7 minutes or until thoroughly heated through.

- Brush ham with 1 tablespoon of the maple syrup.

HAM STEAKS WITH APPLE-MUSTARD CHUTNEY
Steps:
- For the ham steaks: Heat the oil on a cast-iron griddle over medium-high heat. Add the ham steaks and cook until golden brown on both sides, about 4 minutes per side.
- For the apple-mustard chutney: Melt the butter in a medium saucepan over medium-high heat. Add the apple and onion and cook until softened, about 3 minutes. Add the apple cider vinegar, brown sugar, mustard seeds and some salt and pepper. Cook until thickened, about 5 minutes. Serve the chutney over the ham steaks.

- Remove rind and trim off all but 1/4-inch of outer fat. Cut ham into two serving pieces. Score the fat edge at 1-inch intervals so the steak does not curl during cooking. Lightly saute, ham on both sides in butter for 3 to 4 minutes a side. Remove ham steak to a plate.
- Add apple and saute until somewhat soft. Stir in mustard and cider and reduce until the cider has almost entirely evaporated. Add the heavy cream and reduce until slightly thickened. Season to taste with salt and pepper and spoon sauce over steak.
