HAMBURGER PIE

I'm not sure where this recipe came from, but it's been one of my favorites since I was a kid. Now that I'm grown up, I make it for my husband and he loves it, too.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Peel and quarter potatoes, and introduce into boiling water; cook until tender, about 15 minutes. Drain and mash. Set aside.
  • In a large skillet over medium-high heat, cook ground beef and onion until beef is brown. Drain. Stir in tomato soup and green beans. Pour into a 9x13 baking dish. Mound mashed potatoes in a ring around the meat mixture (do not cover meat). Sprinkle potatoes with shredded cheese.
  • Bake in preheated oven 30 minutes, until potatoes are golden.

  • In a bowl, combine the first six ingredients; mix well and set aside. In another bowl, toss baking mix and milk until a soft dough forms. On a floured surface, roll out the dough to fit a 9-in. pie plate. Line ungreased pie plate with pastry. Fill with meat mixture; trim and flute edges. Bake at 375° for 15 minutes or until crust is golden brown.

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.

Steps:

  • Cook potatoes until tender, mash with milk, butter, salt and pepper.
  • While potatoes are cooking, brown ground beef and onions, drain off fat.
  • Drain liquid from green beans.
  • Stir tomato soup and green beans in to ground beef.
  • Season to taste with salt and pepper.
  • Turn beef mixture in to a 1 1/2-quart casserole dish.
  • Spoon mashed potatoes over the top.
  • Bake, uncovered, in a 350°F oven for 30 minutes.
  • (Note: you may want to place a sheet of foil under the casserole dish, this tends to "bubble over").

  • In a skillet, cook beef, onion, salt and garlic salt over medium heat until meat is no longer pink; drain. Add the green pepper, oregano, parsley, bread crumbs, cheese and egg; mix well. This is an old recipe I have made for 30 years. Where I got it to begin with I have no idea. But my son and boyfriend love this. I use Yoders mashed potatoes that you can buy in the meat department. One bag works great.

Steps:

  • Pre heat oven 375 degrees.
  • Take beef, onion, 1/2 teaspoons garlic powder, milk and ketchup and mix up good. Pat in a 9 inch deep dish pie pan on bottom and up sides of dish, covering all sides and bottom.
  • Bake for 20 minutes or until done. Drain grease off.
  • Mix corn, 1/2 teaspoons garlic powder, 1/3 cup parmesean cheese and put on top of baked meat.
  • Mix hot mashed potatoes, egg and rest of parmesean cheese together and put on top, covering the whole top with potatoes. Dot with butter and salt and pepper to taste.
  • Bake another 25 minutes. Serve.

  • Warm oil in a skillet over medium-high heat. Cook beef, breaking up large pieces with a wooden spoon, until no longer pink, about 5 minutes. Remove to a bowl using a slotted spoon. Drain all but 1 Tbsp. fat from skillet. Add onion, carrots and celery; sauté until beginning to brown, about 5 minutes. Add garlic; sauté 1 minute. Transfer to bowl with beef; stir in Worcestershire, tomato sauce and Cheddar. Season with salt and pepper. Let cool slightly. Beat egg in a bowl with 1 tsp. water.
  • Roll out 1 sheet of pastry and fit into a 9-inch pie plate (use aluminum or tempered glass if you intend to freeze). Place on lined baking sheet. Add meat mixture and spread evenly. Roll out second sheet of pastry; place on top of pie. Fold top crust over bottom crust; crimp edges to seal. Brush top with egg wash. Cut steam vents in top.
  • Bake for 15 minutes. Reduce oven temperature to 350ºF; bake until crust is golden and filling bubbles at steam vents, 20 to 25 minutes longer.
