Steps:

  • Add olive oil to a large skillet over high heat. Season stew meat with salt and pepper and sear on all sides.
  • Place in a 4-quart slow cooker. Add onion, green chiles, and bacon. Add seared stew meat.
  • In a small bowl, whisk together tomato puree, Mexican seasoning, chili powder, salt and pepper and beef stock. Pour into slow cooker.
  • Cover and cook on HIGH setting for 4 to 6 hours. Serve in bowls garnished with scallion

2 pounds beef stew meat, cut into bite-sized pieces
1 teaspoon salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
2 tablespoons olive oil
1 small red onion, finely diced

NEW MEXICO GREEN CHILE MEATLOAF

Growing up in New Mexico, we had access to the Hatch green chile (the best!). I add green chile to a lot of my recipes and it rather sets this meatloaf off. It's very good cold, made into sandwiches the second day.

New Mexico Green Chile Meatloaf image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Mix hamburger, tomatoes, green chiles, onion, milk, eggs, crackers, salt, and pepper together in a bowl. Transfer to the prepared loaf pan.
  • Bake in the preheated oven until until no longer pink in the center, about 1 hour and 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Let cool in the pan for 10 minutes before transferring to a serving dish.

Steps:

  • Cut four 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first 10 ingredients. Add beef; mix lightly but thoroughly. Shape into a 9-in. round loaf. Place loaf in center of strips in slow cooker., Cook, covered, on low 3-4 hours or until a thermometer reads at least 160°. Steps:

  • Peel and dice the onion. Remove core and seeds from red pepper and jalapenos and dice. Thinly slice the green onion.
  • In a large skillet heat the olive oil. Add diced onion, red pepper, jalapenos, garlic, chili powder, salt, oregano, and cumin and saute 1 minute. Drain crushed tomatoes and add to skillet. Cover, reduce heat to low and cook about 10 minutes. Remove from heat and cool to room temperature.
  • In a large bowl, combine beef and sausage. Add tomato mixture, bread crumbs, eggs, corn, and green onions and mix well.
  • Press meat mixture into 2 9x5 inch loaf pans.
  • Bake at 350 degrees for 50 minutes.
  • Remove from oven and pour off any pan juices. Top evenly with cheddar cheese and return to the oven for about 4 minutes, until cheese melts.

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Spray Pam in large meat loaf pan; set aside.
  • In large mixing bowl add hamburger, beaten eggs, Rye bread pieces and evaporated milk. Mix well.
  • Add white wine vinegar, chili pepper, cumin and olives pieces. Mix.
  • Add neufchatel cheese pieces to meat mixture. Mix.
  • Put in loaf pan and pat down. Make sure the cheese pieces are not sticking up. Cover them so they are inside of the meat loaf.
  • Bake for 40 minutes or until sides come away from the loaf pan and top has risen.
  • Take out of oven and cool.

  • Combine the beef cubes and 3 tablespoons rice flour in a bowl; toss to coat evenly.
  • Heat the olive oil in a large skillet over medium heat. Add the beef to the hot oil, reduce heat to low, and cook and stir until the beef is completely browned and tender, 7 to 10 minutes. Stir the garlic and 1 tablespoon rice flour into the beef and cook another 2 minutes. Add the chili powder and stir. Pour the beef broth over the beef mixture; mix well. Season with the sea salt.   • Make foil handles for slow cooker. Do this by cutting three 18x3 inch strips of heavy duty foil paper; place in bottom of slow cooker in criss-cross strips to resemble bicycle spokes on a wheel.
  • Spray foil paper in slow cooker with cooking spray.
  • In a bowl, combine beef, beefy onion soup mix, oats, eggs, 3/4 cup chili sauce, and black pepper; mix well.
  • With your hands, shape meat mixture into round ball.
  • Place round ball into slow cooker; pat down into loaf shape.
  • Cover and cook on low for 3 to 4 hours. Before last half hour of cooking time, spread remaining chili sauce over top of loaf and continue cooking.

Steps:

  • Place chiles and 3 cups water into a medium stockpot, and bring to a boil. Remove from heat and steep for 30 minutes to soften. Strain into a bowl, reserving the cooking liquid. Place the chiles and some of the liquid into a blender, and puree until smooth. Add more liquid as necessary to form a smooth sauce. Pass sauce through a fine mesh strainer to remove any seeds and the tough skins; set aside.
  • Cut the roast into 1 to 2 inch chunks. In a medium bowl, combine flour, salt, and pepper. Dredge the beef chunks in the seasoned flour; set aside.
  • Heat olive oil in a large pot over medium heat. Saute onion until tender and translucent, about 5 minutes. Add beef chunks a few at a time, so as not to overcrowd the pot, and cook until evenly brown. Remove cooked meat, and continue browning remaining meat. Return reserved cooked meat to the pot. Stir in pureed chile mixture. Add beef stock to just cover beef chunks, or to personal preference. Bring to a boil over medium heat. Reduce heat to lowest setting, and simmer for 3 hours, or until meat is tender. If necessary, adjust with more stock during cooking.
