HAMBURGER FRIED RICE
This is my version of a favorite childhood recipe that my friend's mother used to make for us. I had to try to recreate from memory over the years and this version is the best. If you like fried rice, I don't think you will be disappointed.

Steps:
- Heat butter in small skillet, add eggs and soft scramble. Remove from heat. Set aside.
- Heat oil in wok or large skillet. Add hamburger and cook very well.
- Add garlic, ginger, soy sauce and pepper flakes to cooked hamburger. Stir-fry for 1 minute longer.
- Add rice. Stir-fry for 3 to 4 minutes longer.
- Stir in scrambed eggs and thinly sliced green onions. Serve at once.

- In a large bowl, beat eggs and pepper until blended. In a large skillet, heat 1 tablespoon oil over medium-high heat. Pour eggs into skillet. As eggs set, lift edges, letting uncooked portion flow underneath. , When eggs are completely cooked, remove from the skillet; cut into strips; return to pan. Stir in the remaining ingredients. Cook and stir over medium-low heat in remaining oil for 5 minutes or until heated through.,

CHEESEBURGER FRIED RICE

- For the awesome sauce: Add egg yolks and pickle relish to a food processor and pulse until incorporated. Add your garlic and mushroom seasoning and pulse again.
- Now, go for it: Slowly drizzle your oil into the mix while all the flavors are spinning around and mingling (like you did at last year's holiday party). Don't go too fast though! The sauce may break, and there's no return from that. Be gentle. But make it thick. Thick is good. Transfer to a mixing bowl and fold together all of that mayo goodness with your ketchup.
- You're done! Make the fried rice now, and everything will be okay. (See Cook's Note.)
- For the cheeseburger fried rice: Add oil and onions to a hot wok and cook until golden brown and delicious. Add cooked bacon and browned ground beef. Bring some of the reserved bacon fat into the wok and add the jasmine rice.
- With an aggressive approach, mix, stir, rake, swirl, toss... whatever it takes to bring that rice back to life. Make sure every grain has been given some bacon-fat lovin' and nothing is sticking to the wok, until the rice has been fried and is completely alive again. Show it some respect by seasoning with mushroom seasoning and sugar. Not too much? but not too little. Taste this beautiful creation. It is delicious. If desired, add more mushroom seasoning. Toss in lettuce and tomatoes and mix just until incorporated; not wilted but not raw.
- For the garnish: Build this beauty like you would any other cheeseburger. Smother with nacho cheese, 3 ounces awesome sauce and mustard. Sprinkle some sesame seeds over the top (what's a burger bun without sesame seeds?) and last, but very certainly not least, the pickle chips. ENJOY.
GROUND BEEF FRIED RICE
This fried rice with ground beef is great with red wine, candlelight, and jazz music. Ok, this is the recipe my father's second wife said "captured my father" ... who knows? But it is very delicious! You can vary this additional veggies, mushrooms, etc., but start here first.

- Combine ground beef, soy sauce, garlic, black pepper, and salt in a large skillet over medium-high heat. Cook and stir until browned and crumbly, 5 to 7 minutes. Remove beef to a plate. Drain and discard grease from the skillet.
- Heat vegetable oil in the same skillet over medium heat. Add carrots, bell pepper, and onion; cook until tender, 15 to 20 minutes. Add cooked rice and beef to the skillet, toss to combine, and heat until warmed through.
- Meanwhile, melt butter in a small nonstick skillet over medium heat. Crack egg into pan. Cover with a tight fitting lid and cook 3 minutes, or until white is set. Place egg on top of beef fried rice.

Steps:
- 1. First chop the slivered almonds so they are ready. Don't chop them too small. Then in a large fry pan, cook the Rice A Roni per the directions on the package. After adding the water in as the package directions tell you, then add the chopped almonds, stir and simmer according to the directions. I usually simmer it for 17 minutes. I like it a little wet when its done.
- 2. While the rice is simmering, in another pan, fry the hamburger until it is no longer pink and drain.
- 3. When the rice is done, add the hamburger to the rice a roni and mix, cooking it about 5 to 7 minutes longer letting the water evaporate so it is no longer wet and the hamburger is well incorporated. Add salt and pepper to taste. If you like pepper as I do, it really gives this a good taste.
- 4. This is good to reheat and it freezes well to. The pictures are mine.
KITTENCAL'S GROUND BEEF FRIED RICE
A long time family favorite! --- you can substitute the broccoli florets for one 6-ounce package frozen pea pods if desired --- make certain the the cooked ground beef is very well browned and well drained, also make certain to use only *cold* cooked rice, cooking time does not include cooking the rice --- you will love this! :)

- In a wok or a large skillet brown the ground beef with garlic and ginger over medium heat (about 10 minutes) breaking up into small pieces; drain the fat, then transfer to a bowl.
- Heat 2 tablespoons oil in the same skillet over medium-high eat until hot.
