LOADED POTATO SKIN SLIDERS
These mini burger sliders skip the bun in favor of something even better: loaded potato skins stuffed with Cheddar and bacon! Just bake the skins until hot and crispy, then flip them inside out to sandwich grilled beef patties. Topped with shredded lettuce, sliced tomato and a homemade special sauce, this take on the bacon cheeseburger is a hands-down winner.

Steps:
- Prepare the loaded potato skins according to the package directions for the oven.
- Stir together the mayonnaise, mustard, ketchup, garlic powder, onion powder, smoked paprika, a pinch of salt and several grinds of black pepper in a small bowl until combined. Cover and refrigerate until ready to serve.
- Season the beef with 1 teaspoon salt and several grinds of black pepper, then divide into 12 equal-sized portions (about 1 1/2 ounces each). Shape each portion into a thin, oval-shaped patty about 3 1/2 inches long; the patties will shrink as they cook.
- Preheat a grill pan over medium-high heat and brush lightly with canola oil. Grill the patties until nicely charred and slightly pink on the inside for medium doneness, about 2 minutes per side.
- Put the patties on the cheesy side of 12 loaded potato skins, then top with 2 slices of tomato and some shredded lettuce. Spread the sauce on the stuffed side of the remaining 12 loaded potato skins, then sandwich together to create sliders.

Steps:
- Spray a 12x17 baking sheet with oil spray. Spread the shredded potatoes evenly on baking sheet. Bake for 10 minutes. Using a flat spatula flatten potatoes firmly against sheet and bake for 10 more minutes. Then broil on low for 5 minutes or until hash browns are lightly browned and crispy.
- Make 12 thin square pork patties. Season both sides of the patty with seasoned pepper. Using a griddle or non-stick pan, brown patties over medium heat for about 4 minutes on each side. Place cooked patties on paper towels and top each with two small squares of Havarti cheese.
- Using a sturdy spatula separate hash browns into 24 small squares for slider tops and bottoms. Gently assemble 12 sliders.

I was first going to use elbow macaroni and then remembered my package of Simply Potatoes Hashbrowns...I mixed it altogether and threw it in a baking dish. We had company that night and EVERYONE raved about it! TIP: It is even better if you toss in a bit of shredded cheddar cheese and diced onion before baking.

- Cook potatoes according to package directions.
- Stir in 1 1/2 cups cheese into potatoes at the end, just until melted.
- Scoop cheesy potato filling evenly onto 8 flour tortillas.
- Fold tortillas in half, pressing down slightly so gooey cheese holds them together.
- Layer the tortilla pockets in a greased 9 x 13 glass pan.
- Carefully pour 1/2 cup vegetable broth evenly over the top of each tortilla wrap.
- Sprinkle remaining 1/2 cup of cheese over the top.
- Bake at 400 degrees for 10 minutes.
- Top with sour cream and enjoy!

- Preheat oven to 375 degrees F (190 C) and arrange a rack in the center of the oven. Also line a standard muffin tin with parchment liners (to prevent sticking) and generously grease them with oil of choice (for flavor).
- Add grated potatoes (see notes for my go-to method) to a large mixing bowl with shallot, parsley, corn, melted vegan butter, cornstarch, salt and pepper and stir to thoroughly combine.
- Divide mixture evenly between 12 muffin tins (amount as original recipe is written // adjust if altering batch size), filling each tin with about 1/4 cup of the potato mixture. Press down gently to form. Sprinkle the tops with a pinch more salt and pepper and bake for 20 minutes.
- At the 20-minute mark, increase oven temperature to 425 degrees F (218 C) and bake for 10-12 minutes more, or until the tops appear golden brown, and the edges are dark golden brown.
