HAYSTACKS
I have made these cookies for my family for about 30 years now. My son (who is now 36 years old) gets so excited when I make these; he always enjoys them with a tall glass of milk. I find that I have to be careful when melting the butterscotch because it seems to scorch easily, so take care - this is an essential ingredient! Also, these are best enjoyed in the winter because they seem to melt and not taste as great in the warmer weather.

Steps:
- Melt the butterscotch chips in a double boiler over simmering water.
- In a medium bowl, combine the melted butterscotch and peanut butter. Add noodles and peanuts and mix well. Drop the batter by the heaped tablespoon onto waxed paper and refrigerate until cool and set, about 20 minutes.

- Stir peanuts and noodles gently into the melted peanut butter mixture.

- 1. Brown your ground beef and drain. Add spaghetti sauce and taco seasoning. Prepare noodles or rice as per package instructions. Keep beef and rice or noodles warm as you prepare veggies.
- 2. To serve: Each person gets a large bowl. Start with a base of tortilla chips, broken Ritz crackers or Fritos corn chips. Start your haystack with a pile of hot rice or hot noodles. Top with meat sauce. Then move on down the line forming a large mound or haystack with your chosen optional ingredients. Top with either warm, creamy cheese sauce or salsa, guacamole, additional shredded cheddar and sour cream. The height of your haystack is up to you! Enjoy!

- Divide crackers between two ungreased 13x9x2-inch baking dishes. Top with rice.
- In a skillet, cook beef and onion until meat is no longer pink; drain.
- Add tomato juice, water and seasonings; simmer for 15-20 minutes. Spoon over rice. Sprinkle with lettuce and tomatoes.
- In a saucepan, melt butter. Stir in flour until smooth. Gradually add milk and Velveeta. Bring to a boil; cook and stir for 2 minutes.
- Pour over the tomatoes. Top with cheddar cheese and olives.
