BASIC GRANOLA RECIPE
This basic granola recipe is pretty perfect as is, but feel free to swap out ingredients to customize it to your taste (see Cook's Notes below for sample substitutions).

Steps:
- Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, light brown sugar, cinnamon and salt. Stir the honey, oil and vanilla extract into the dry ingredients. Use your hands if necessary to make sure it's well combined.
- Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.
- Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.

Steps:
- In a large bowl, combine the oats, wheat germ, sunflower seeds, cinnamon, pecans, brown sugar and salt (if using); mix well.
- In another bowl, mix the oil, honey, water and vanilla.
- Pour the liquid mixture over the dry ingredients and mix well.
- Spread over a jelly-roll pan sprayed with nonstick spray.
- Bake at 300°F for 50-60 minutes, stirring every 15 minutes.
- The last 10-15 minutes add the raisins.
- The granola will brown as it cooks.
- Cool in pan on wire rack.
- Store in an airtight container.
- ENJOY!
BAKED HOMEMADE GRANOLA (LOWER FAT)
By making your own granola you can reduce the fat and increase the richness of nuts and seeds. This is great alone as a snack or on top of yogurt or anything! For the mixed nuts and seeds you can use all or a mixture of slivered almonds, coarsley chopped walnuts, pumpkin seeds, sunflower seeds and sesame seeds.

Steps:
- Set oven to 300 degrees.
- Place oven rack to center position.
- Lightly oil two large baking sheets.
- In a large bowl stir together oats with nuts, seeds and spices.
- In a small bowl stir together the warm water with maple syrup and vanilla.
- Slowly pour the syrup mixture over the nut mixture; stir with a wooden spoon to combine.
- Spread out on the greased baking sheet/s.
- Bake (center oven rack) for about 30 minutes, stirring every 10 minutes to prevent burning, until granola is crumbly and golden.
- Remove from oven and immediately stir in the raisins and apricots.
- When the mixture is cool, store in an airtight container for up to 5 days or refrigerate for 1 month.
- Delicious!

HEALTHY GRANOLA
We decided to give granola a makeover, and not just by cutting calories and sweeteners. Yes, we trimmed the sugar-but we also added healthy fats, like olive oil, and increased the fiber by including with almonds, sesame seeds and puffed millet. One 1/2-cup serving delivers 4 grams of fiber and only 8 grams of sugar! Add some milk (for calcium and protein) and your favorite dried or fresh fruit and you've got a complete breakfast or snack.

- Adjust an oven rack to the middle position and preheat the oven to 325 degrees F.
- Toss together the oats, millet, almonds, coconut flakes, pumpkin seeds, sunflower seeds and sesame seeds in a large bowl.
- Whisk together the olive oil, brown sugar, maple syrup, vanilla and 3/4 teaspoon salt together in a small bowl.
- Pour the olive oil mixture into the oat mixture and toss until evenly coated. Spread out on a rimmed baking sheet and bake until golden and toasted, tossing the mixture around about halfway through, 30 to 40 minutes. - Preheat oven to 325 degrees. Lightly grease baking sheet with canola oil (you may also use cooking-oil spray or line baking sheet with nonstick foil). In a medium bowl, combine the oats, flax meal, cinnamon, and salt. Mix well. In a small bowl, combine the apple juice, maple syrup, honey, and optional brown sugar. Mix well.
- Add the wet ingredients to the dry ingredients, stirring until the mixture is fully combined and moist. Spread the mixture on the greased baking sheet and bake for 15 minutes.
- Remove from the oven and stir, breaking the large chunks into smaller pieces. Bake for an additional 8 minutes or until crisp. Remove from oven and allow to cool. While still warm, stir to break up any remaining chunks. When completely cool, store the granola in an airtight container.

ADDICTIVE AND HEALTHY GRANOLA
This recipe is addictive and very easy. It tastes like the top crunchy part of cobbler desserts. It would be good as a cereal with milk or to put in yogurt or topped on fruit that has been fried in a little butter and brown sugar. A dollop of homemade whipped cream wouldn't hurt the latter!
