CREAM OF BRIE SOUP
Very tasty soup. Great as a starter or light lunch. So good served in hollowed-out large Kaiser rolls!

Steps:
- Melt the butter in a large saucepan over medium heat; cook the onions and celery until the onions are translucent, about 5 minutes. Stir in the flour, and cook for 3 minutes, stirring constantly. Gradually whisk in the chicken stock. Simmer until the celery is tender, about 20 minutes, stirring occasionally. Stir in the Brie cheese, and allow to melt for about 5 minutes.
- Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth, and pour into a clean pot. Heat the soup to almost simmering over medium-low heat. Pour in the cream. To serve, garnish with red and green pepper strips.

Steps:
- In a saucepan combine the cubed potatoes with onion, celery, cayenne, garlic powder and bouillon powder and chicken broth (start with 2 teaspoon bouillon powder) bring to a simmer over medium heat.
- Reduce heat cover and simmer for about 20 minutes or until veggies are tender (at this point you may add in more bouillon powder if desired).
- In a small bowl whisk together 1/4 cup evaporated milk with 3 tablespoons cornstarch until smooth; stir into the simmering broth mixing constantly.
- Add in the remaining evaporated milk; bring back to a boil, reduce heat to low and simmer for about 3-5 minutes or until bubbly and thickened.
- Remove from heat season with black pepper and salt if desired, then stir in the shredded cheese.
- Delicious!

CREAMY POTATO SOUP

Steps:
- Start boiling potatoes.
- In a soup pot, saute the onions and celery over medium heat for about 5-8 minutes, until it is soft.
- Add the garlic and cook for another 2 or 3 minutes.
- Add the flour and stir constantly for a minute.
- Stir in the milk and vegetable broth; bring to a slow simmer for about 5 minutes.
- Add paprika and season with salt and pepper.
- By this time, your potatoes should be done - you don't want them to be falling apart, but just fork-tender. Drain the potatoes and divide in half.
- Mash half of the potatoes and stir them into the soup. Simmer for another five minutes.
- Add the remaining potato chunks, and adjust seasonings to taste - I added a bit more pepper and another dash of smoked paprika.
- Serve with whatever toppings you like - bacon, fried onions, grated cheese, scallions, etc.

- Sauté onions, shallots, and mushrooms in margarine for 5 minutes in a non stick skillet.
- Add 3 Tbsp sherry and chicken stock and simmer for 10 minutes.
- Add milk and cheese and stir until cheese is melted and soup begins to thicken.
- Combine cornstarch and remaining 3 Tbsp of sherry and stir into soup.
- Continue cooking until soup is thickened.
- Season with pepper and nutmeg.
- Taste; add salt if needed.

APPLE-POTATO SOUP
This soup has a wonderful combination of apples, bacon (I use a bacon substitute) and leeks. Not too sweet, with a nice "bite." Sweet-tart apples and smokey bacon play off one another nicely. Good Fall soup, or Thanksgiving side dish which was when I made it. I could not find celery root so I added a few more stalks of celery. Can be made a day ahead, refrigerated and reheated for the next day. Leftover apple rings make a great snack. From a 2006 issue of Cottage Living, a Sara Foster recipe.

- Saute onion in hot oil over medium-low heat in a soup pot or Dutch oven 10 minutes or until soft and translucent. Add celery and leek and saute 5 minutes. Add garlic and saute 2 minutes.
- Stir in apples and next 8 ingredients (through pepper). Bring to a boil, reduce heat and simmer, uncovered, 45 minutes.
- Meanwhile, preheat oven to 350 and thinly slice apple for apple rings using a mandoline if possible. Lightly coat a baking sheet with cooking spray, and place apple slices in a single layer on sheet. Sprinkle with sugar and bake about 15 minutes. Sprinkle evenly with salt, if desired.
- Remove soup from heat and let cool slightly. Process with an immersion blender, or place soup in a food processor or blender and process in batches until smooth. Return to pot.
- Stir in milk or half-and-half and next 2 ingredients; cook over low heat, stirring occasionally, until hot. Top with oven-baked apple slices, bacon (vegetarian or regular or crispy pancetta) and chives.

I found another recipe on this site that used cream cheese in the potato soup, so I used it as inspiration for this soup...that is shockingly creamy, lucious, and not as high in fat & calories as you would think. I can't wait to serve it at a teacher appreciation luncheon tomorrow!

- In a large soup pan, coated with cooking spray sweat onions on medium heat for about 3-4 minutes until soft and translucent.
- Add potatoes and chicken stock. Bring to a boil and cook at a low boil until potatoes are tender. Reduce heat to medium. Add roasted garlic and the seasoning (I am always slightly off on the seasoning, so use just the seasoned salt and black pepper to your taste).
- Using a hand-held blender, puree soup. Continue cooking at medium for 5-7 minutes. Add Cream Cheese and Half & Half. Reduce heat to medium low and cover. Cook for about 15-20 minutes. Stir frequently.
- Check for seasoning -- add more if needed.
- Serve with the crumbled turkey bacon, cheese, and scallions. Enjoy!

- Mix sour cream, cottage cheese, about 1/2 the cheddar, garlic, salt, pepper& basil in large mixing bowl.
- Add potatoes and onions, mix well.
- Pour mixture in a 13 by 9 pan that you sprayed with Pam.
- Pat down with the back of your spatula.
- Sprinkle remaining cheese over top.
- In a baggie, crush corn flakes and then add some salt, pepper and garlic powder and toss around a bit.
- Sprinkle corn flake mixture over top of cheese.
- Bake 375 for about an hour.

- Pour 4 cups vegetable broth into large pot; add potatoes; bring to a boil and simmer until fork-tender; drain and slightly mash potatoes; reserve broth.
- Pour remaining 1 cup vegetable broth into medium pot; add cauliflower and onions; bring to a boil and simmer until very soft.

- Spray a soup pot with cooking spray, then add the onion, leeks and quartered apples, sauteing over medium heat until softened, 5 to 7 minutes.
