Sweet and Savory Oatmeal Bake image

Steps:

  • Preheat the oven to 350 degrees F.
  • Stir together the oats, walnuts, coconut and salt in a large bowl to combine. In a separate bowl, lightly beat the egg, then stir in the milk, brown sugar and olive oil. Stir the wet ingredients into the dry ones and stir to combine. Add the apple and bacon to the mixture and stir to evenly distribute.
  • Pour the oat mixture into an 8-by-8-inch baking dish. Cover loosely with foil and bake in the center of the oven for 30 minutes. Uncover and bake an additional 30 minutes. Serve hot, scooped into bowls, or let cool completely to room temperature and cut into squares for serving.

1/4 cup unsweetened shredded coconut, toasted

Steps:

  • In a large bowl, whisk together first 6 ingredients. Stir in oats, blueberries and cherries. Transfer to a greased 8-in. square baking dish. Refrigerate, covered, 8 hours or overnight., Preheat oven to 350°. Remove oatmeal from refrigerator while oven heats. Stir oatmeal; sprinkle with almonds. Bake, uncovered, until golden brown and a thermometer reads 160°, 40-50 minutes. Serve warm.

  • Melt margarine (butter) and cool slightly.
  • Meanwhile, mix together the oatmeal, brown sugar, baking powder, and salt in a large bowl. In a small bowl, mix the eggs, milk, and melted margarine (butter). Stir into the dry mixture.
  • Bake in a buttered 13x9x2-inch baking pan at 350 - 375 degrees for approximately 30 minutes.
  • OPTIONAL: Add 1/2 cup each chopped dried fruit and/or nuts of your choice before baking. Or, you could also bake without the fruit/nuts in the mix, serving it with a dollop of vanilla yogurt with the chopped fruit and nuts sprinkled on top.
