HEARTY POTATO SOUP
Having grown up on a dairy farm in Holland, I love our country life here in Idaho's "potato country." My favorite recipe for potato soup originally called for heavy cream and bacon fat, but I've trimmed down the recipe. -Gladys DeBoer, Castleford, Idaho

Steps:
- In a Dutch oven, cook the potatoes, carrots and celery in water until tender, 15-20 minutes. Drain, reserving liquid and setting vegetables aside. , In the same pan, saute onion in butter until tender. Stir in the flour, salt and pepper; gradually add milk. Bring to a boil, cook and stir for 2 minutes or until thickened. Gently stir in cooked vegetables. Add 1 cup or more of reserved cooking liquid until soup is desired consistency.

Steps:
- In a large stock pot combine potatoes, onions, celery, bouillon cubes and enough water to cover all ingredients. Bring to a boil and simmer on medium heat until potatoes are with in 15 minutes of being finished.
- Add half and half, bacon, cream of mushroom soup and stir until creamy. Add cheese and stir until completely melted. Simmer on low until potatoes are done.

Steps:
- Place potatoes into a large pot and cover with water; bring to a boil. Cook until fork-tender, about 10 minutes. Drain.
- Place bacon in a large saucepan and cook over medium-high heat, turning occasionally, until crispy, about 8 minutes. Drain bacon slices on paper towels. Pour out bacon grease.
- Melt butter in the saucepan over medium heat, scraping the bottom of the pan with a flat-edged wooden spoon. Add celery, onion, carrots, 1 teaspoon salt, and 1/2 teaspoon pepper; cook and stir until tender, about 10 minutes. Sprinkle in flour; cook and stir for 2 minutes.
- Pour half-and-half and chicken broth into the saucepan. Add potatoes, 1 teaspoon salt, 1/2 teaspoon pepper, thyme, cayenne pepper, and nutmeg. Bring to a boil, stirring frequently. Stir in bacon pieces. Reduce heat and simmer, stirring often, until flavors combine, about 10 minutes.
- Ladle into serving bowls. Garnish with 1/2 teaspoon pepper, green onions, and paprika.

GRANDMA'S KITCHEN HEARTY POTATO SOUP
Grandma's secret: To make this a filling meal, Grandma usually served this soup with fresh bread. For a slightly different twist, serve it in individual bread bowls. I'm thinkin' this could easily be done in the crock pot.

Steps:
- Peel potatoes and cut into 1-inch cubes.
- Bring water to a boil in large saucepan. Add potatoes and cook until tender.
- Drain, reserving liquid. Set aside potatoes.
- Measure 1 cup cooking liquid, adding water, if necessary; set aside.
- Peel and finely chop onion. Melt butter in saucepan over medium heat.
- Add onion to saucepan; cook, stirring frequently, until onion is translucent and tender, but not brown.
- Add flour to saucepan; season with pepper flakes and black pepper to taste. Cook 3 to 4 minutes.
- Gradually add potatoes, reserved 1 cup cooking liquid, milk and sugar to onion mixture in saucepan; stir well. Add cheese and ham.
- Simmer over low heat 30 minutes, stirring frequently.
- Store leftovers, covered in refrigerator.

- Combine first six ingredients in medium saucepan.
- Add sufficient water to cover vegetables, if necessary.
- Bring to a boil, reduce heat, and simmer until vegetables are tender (about 10 minutes).
- Remove garlic clove.
- Add evaporated milk and spices.
- Simmer for 2-5 minutes.
- Remove from heat and serve immediately.

- Bring water and porcini mushrooms to boil in large saucepan. Turn off heat; cover saucepan. Let mushrooms stand in hot water 10 min.
- Drain soaked porcini in colander, reserving cooking water. Coarsely chop drained porcini.
- Heat 1/4 cup dressing in same saucepan over medium heat. Add potatoes, carrots, celery and onions; stir. Cook, stirring frequently, 5 min. Add cremini mushrooms, thyme and remaining dressing; stir. Cook, stirring frequently, 12 min.
- Add porcini, bouillon powder and reserved porcini cooking water; stir. Bring to boil; cover. Simmer over medium-low heat 10 min. or until potatoes are tender.

There are other potato soups at Zaar, but none the same as this one. This is a hearty, comforting soup with Italian sausage, carrots and a garlic kick. Prep and cook time are approximate.

- Place potatoes, carrot and garlic in a Dutch oven and cover with water.
- Bring to a boil.
- Reduce heat; cover and simmer for 15-20 minutes or until tender; drain.
- Place 3 cups potato mixture in a bowl and mash.
- Set aside mashed potatoes and remaining potato mixture.
- In a skillet, cook sausage and onion over medium heat until meat is no longer pink; drain and set aside.
- In a soup kettle, melt butter.
- Stir in flour until smooth; gradually add the milk while stirring.
- Bring to a boil; cook and stir for 2 minutes or until soup is thickened.
- Add the parsley, salt, bouillon, seasoned salt and pepper; mix well.
- Add the mashed potato mixture; cook and stir until heated through.
- Add the reserved potato and sausage mixtures.
- Heat through.

Not your normal potato soup! It's better! Cabbage and carrot hide in the broth and bring out a hint of sweetness. Trying to get someone to eat their veggies? Try this! This is THE potato soup I have been making forever! Healthy, hearty and filling yet EASY and quick to make! Especially if made with leftover potatoes. Cutting the cabbage small really helps this cook fast. Feel free to use whatever meat your family prefers. I use turkey products but any type of meat or even soy would be equally nice. Hope you enjoy! NOTE: I adjusted the amount of liquids here after some very helpful reviews. - Add butter and oil in a dutch oven and heat over medium heat. Add cabbage and onions and cook until they start to soften, stirring occasionally.
- Chop meat to desired size and add to pan. Continue to saute about 5 minutes.
- Add carrot and cook until vegetables are as soft as you want them.
- Slice potatoes into various sized pieces, some small so they dissolve and make the soup thicker and some larger so you will have nice sized chunks. Add to pan stir to combine and allow the potatoes to absorb some of the flavors.,.
- Add milk and season with salt and pepper.
- Cook just until heated through. Do not let it bubble or boil.
- Garnish as desired and serve.
- NOTE: If not using cooked, leftover potatoes peel and cut potatoes in large bite sized pieces. Cook in water or broth that has been salted a little more than normal. Drain well and cool. I like to make ahead and refrigerate as they seem to hold up better in the soup but you can cook them while you are preparing the above.
- Also: You can adjust milk and broth, using more or less to reach the consistency you desire.

- In a nonstick Dutch oven, saute the celery, onions, leeks, green pepper, jalapenos and garlic in oil until tender. Add the potatoes, broth, water, pepper and salt. Bring to a boil. - Bring a large pot of salted water to boil; add potatoes and boil until just tender, 7 to 10 minutes. Drain.
- Heat a large nonstick skillet over medium to medium-high heat and cook sausage links. When cooked through, remove to a plate. Add bacon to the same skillet and cook to nearly your desired doneness.
