HEAVENLY OATMEAL RAISIN COOKIES
These are soft, chewy drops of heaven. They're less buttery than the recipe on the Quaker lid, so they rise more. Put them in tupperware and they stay soft forever. With chocolate chips they're really sinful. They last a day in my house.

Steps:
- Butter baking sheets.
- Pre-heat oven to 350.
- In a bowl with mixer, cream butter until fluffy.
- Add dark brown sugar and granulated sugar.
- Continue creaming until smooth.
- Add eggs and vanilla, blend well.
- Combine flour, baking soda, cinnamon and salt.
- Add dry ingredients to sugar mixture, blend well.
- Stir in oats and raisins, combine well.
- Drop cookies on baking sheets (I make them rather large so they're extra chewy) Bake 12-15 minutes until light golden brown.
- Transfer cookies to wire cooling rack immediately to cool.

Steps:
- Add all ingredients. If you don't want oatmeal, do 6 cups flour.
- Beat for 5 minutes. Note: with a Bosch Universal you may cut blending time in half.
- Add chocolate chips. Mix.
- Drop by spoonfuls onto cookie sheet.
- Bake at 350°F for 10 minutes.
- Notes � if dry, add a tbsp of water.
- - if sticky add more flour.

HEAVENLY HOTS
This recipe appeared in The Times in an article by Joanna Pruess. The recipe came from Bridge Creek Restaurant in Berkeley, Calif. A few tips: Don't cook the pancakes all the way through. You want the center to be a pocket of cream. The pancakes are so fragile that it may take a few tries to flip them. I used the thinnest, most flexible spatula I own, wedged it halfway under the pancake, letting the other half hang, then turned my wrist and gently laid it down on the other side. I recommend this over more aggressive flipping, which will tear the pancakes.

- Whisk together all the ingredients except the vegetable shortening in a large bowl; beat until smooth. This can also be done in a blender. Chill the batter overnight. (The batter will keep, refrigerated, for up to one week.)
- The next day, heat the griddle or skillet over medium-high heat. Beat the batter to re-emulsify it. Lightly coat the griddle or skillet with shortening. Drop small spoonfuls - I used ¾ tablespoon - of batter onto the griddle, making sure that when they spread out they measure less than 3 inches in diameter. When a few bubbles appear on top of the pancakes and the bottoms are browned, turn and cook the second side briefly. (You don't want to cook the pancakes all the way through because you want the center to remain creamy.) Serve with syrup or honey on the side.

- Combine butter and coffee in a small saucepan. Cook over medium low heat until butter melts and coffee dissolves, stirring occasionally. Remove from heat, and let cool to room temperature. Combine flour, baking soda, and salt; set aside. Combine butter mixture, sugars, egg and egg yolk. Beat at medium speed until blended. Gradually add flour mixture, beating at low speed just until blended. Stir in chocolate chunks and walnuts. Drop dough by tablespoonfuls onto ungreased baking sheets. Bake at 325° for 12 to 14 minutes. Cool slightly before removing from baking sheets. Remove from wire racks to cool completely.

- In a large bowl or disposable roasting pan, toss together the corn and rice cereal, rice cereal, almonds and coconut.
- Combine the butter, sugar and corn syrup in a large saucepan and bring to a boil. Once boiling, continue to cook for 3 minutes. Pour over the cereals, using a large wooden spoon to stir the mixture until evenly coated. Spread out on a cookie sheet to cool. Store in an airtight container at room temperature.
