Fresh Citrus with Gelato and Almond Cookies image

Steps:

  • Divide the blood oranges, navel oranges and grapefruit decoratively among 4 shallow dessert bowls. Sprinkle with the flake salt and the crumbled almond cookies. Top each serving with a scoop of gelato and drizzle evenly with the olive oil and honey. Serve immediately.

2 blood oranges, peeled and sliced into rounds
2 navel oranges, peeled and sliced into rounds
1 pink grapefruit, peeled and segmented
1/2 teaspoon flake salt, such as Maldon
2/3 cup crumbled almond biscotti cookies
1 pint vanilla gelato
4 teaspoons extra-virgin olive oil
2 tablespoons orange blossom honey

This is a classic butter sauce. It works well with fish. It's flexible, too, and can take on flavors like chile, ginger and mustard.

Beurre Blanc (Classic French Butter Sauce) image

Steps:

  • Heat 1 tablespoon of butter in a saucepan and add the shallots. Cook briefly, stirring, and add the vinegar and wine. Cook until the liquid is almost totally reduced.
  • Add the heavy cream and salt and bring to the boil. Add the pieces of butter, a few at a time, stirring rapidly with a wire whisk.

Chef John's Beurre Blanc image

Steps:

  • Place wine, lemon juice, cream, shallots, and cream in a saucepan. Bring to a simmer over medium-high heat. Reduce heat to medium, and let simmer until liquid is reduced by about 75%, 4 to 5 minutes. Reduce heat to the lowest setting and whisk in about 2 cubes of butter. Keep butter moving until it melts. When melted, add a few more cubes, whisking continuously so butter emulsifies into the wine/lemon juice mixture.
  • Continue to add butter, a few cubes at a time until all of it has been incorporated and the sauce has a thick, luxurious texture, 4 to 6 minutes. Remove from heat. Taste for seasonings and add a pinch of salt and cayenne, if desired. Serve immediately.

  • Stir together the breadcrumbs, basil, oil, thyme, parsley, pepper and salt. To use with meat, moisten chicken or pork with water and press the crumb mixture over the meat. Place on a rack and bake at 400 degrees F until done, 10 to 20 minutes.

Sauteed Black Sea Bass with Port Beurre Blanc image

Steps:

  • Preheat oven to 500 degrees. Heat olive oil in a medium saute pan over medium-high heat. When hot, sear fish skin side down. Saute for a couple of minutes, add some whole butter to pan and place in 500 degrees oven to finish, don't turn fish onto flesh side. This process should take 5 to 8 minutes, depending on the thickness of the fillets. Make sure the pan is oven proof, if not transfer fish to a baking sheet. For the asparagus, break them near the bottom at the natural breaking point. Add to heavily salted boiling water and cook until tender, drain and finish in a saute pan with whole butter. For the beurre blanc, place the shallots and white wine in saucepan and sweat the shallots. Add the butter a little at a time whisking constantly. When all of the butter is incorporated, whisk in the heavy cream. Finish with sweet port. Place the black bass in the middle of the plate, mound the asparagus on top of the fish, nap with beurre blanc, and garnish with chervil and chives.

We made this sauce recently during class at Culinary Communion - it was intended to go along with the Pork Loin with Spinach and Pernod recipe, but frankly, it went really well on just about everything served with the meal! Roasted Garlic and Herb Beurre Blanc - an Amazing Sauce image

Steps:

  • In a saucepan over medium temperature, combine the wine, shallots, and garlic, and reduce until the wine just covers the shallots.
  • Add the cream or half and half and reduce again until the mixture is thick and syrupy, stirring occasionally.
  • Reduce the temperature to very low and gradually whisk the pieces of butter into the mixture, one cube at a time (alternately, you can remove it from the heat and - using an immersion blender - emulsify the butter into it one piece at a time; this is the method we used during class).
  • Do not allow the sauce to become either too hot or too cold or it will break.
  • Season to taste with salt and freshly ground pepper, stir in the remaining ingredients (the herbs), and serve immediately.
  • Note: we've served this over pork, chicken, rabbit, and vegetables - delicious!
  • Also, feel free to experiment with other herbs than listed above.

Steps:

  • Lightly rinse the halibut steaks and pat dry with paper towels.
  • Place each steak between two sheets of plastic wrap and flatten to about 1/2-inch thick.
  • Dip each steak into the beaten egg white, then into the breadcrumbs.
  • Set aside.
  • Lightly coat a cast iron skillet or a heavy nonstick skillet with cooking spray.
  • Place over high heat and add the halibut steaks.
  • Cook for 2 to 3 minutes per side, turning once, until golden brown and fish flakes easily when prodded with a fork.
  • Remove halibut steaks; keep warm.
  • Heat olive oil in a heavy saucepan; add shallot and sauté for 4 minutes, stirring frequently.

  • Add the chicken broth, capers, parsley, and cornstarch mixture.

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Line a baking sheet with foil.
