HERBED PARTY POTATO WEDGES
I used to make these potatoes as a side dish and one day tried them out as an appetizer for a party. What a hit! They are great finger food and taste good at room temperature, and the herbs can be varied however you like. Steps:
- Preheat oven to 425° Combine first six ingredients; toss to coat. Transfer potato wedges to baking sheets or a cooking stone. Bake 40-45 minutes or until browned on bottom, turning once. Meanwhile, to make sauce, mix sour cream, Parmesan cheese and garlic in a small bowl; refrigerate until serving.

POTATO - HERB WAFFLES
Chives, thyme, green onions and parsley add an herbaceous flair to crispy mashed potato waffles. The kids at school said they had a "French fry" taste, and they are a cheap and easy option for breakfast or dinner. Leftovers freeze beautifully too - pop them in the toaster for a quick dinner starch (or savoury breakfast - try it topped with maple syrup and bacon, or molasses baked beans!).

- Preheat the waffle iron and grease well with spray oil.
- In a bowl, beat together potatoes, butter, eggs and milk until well mixed.
- Add the flours, oats, baking powder, salt, sugar, parsley, chives, green onion and thyme. Stir to mix well.
- Cook waffles 6-8 minutes (they take longer than "regular" waffles). Serve hot with sour cream or plain yoghurt.

POTATO BAKE WITH HERBS
A delicious potato side dish with fresh herbs and cheese. You can use any type of herbs you like. I prefer a mild cheese like Gruyere, but you can use Gouda or Emmenthal as well.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
- Preheat the oven to 400 degrees F (200 degrees C). Grease a baking dish with 1 teaspoon butter.
- Peel potatoes and cut in half lengthwise. Place in the prepared baking dish. Drizzle with melted butter and season with coarse salt. Sprinkle with chervil and chives. Cover with Gruyere cheese.
- Bake in the preheated oven until cheese is melted and lightly browned, about 30 minutes.

HERB ROASTED POTATOES
Steps:
- Preheat oven to 400 degrees F.
- Cut the potatoes into halves or quarters, as long as they are all about the same size.
- Place the potatoes in a large bowl and add the garlic, sage, and crushed red pepper. Generously sprinkle with kosher salt and olive oil. (The potatoes will absorb a lot of oil and salt; they will taste bland if we don't go big here.)
- Lay the potatoes in a single layer on a sheet tray and roast in the preheated oven for 20 to 30 minutes. Check the potatoes halfway through the cooking process to rearrange so the potatoes will have even cooking time and get evenly browned. The potatoes should be nice and brown and really well flavored. Transfer to a serving bowl and serve.

CRUSTY HERB POTATO WEDGES
Simple and delicious. The key is tossing the spices with the potatoes and oil in a bowl and then on to the pan. The silicone mat we are baking on is a very nice thing to have in your kitchen.

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with a silicone baking mat.
- Toss potato wedges, olive oil, herbes de Provence, paprika, salt, and black pepper together in a bowl until potatoes are evenly coated. Place wedges on their sides onto the prepared baking sheet.

HERBED NEW POTATOES

- Melt the butter in a Dutch oven or large heavy-bottomed pot. Add the whole potatoes, salt, and pepper and toss well. Cover the pot tightly and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a small knife. From time to time, shake the pot without removing the lid to prevent the bottom potatoes from burning. Turn off the heat and allow the potatoes to steam for another 5 minutes. Don't overcook! Toss with the herbs, and serve hot.

- Preheat oven to 400°F; lightly grease a 9x13 glass dish.
- Layer potatoes allowing them to slightly overlap.
- Pour most of the vegetable broth over the potatoes.

- Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir.
- Return to a boil, reduce to a simmer, and cook for 10 minutes after returning to a boil. A fork should easily pierce the potato pieces by the end. Drain and let sit one minute while moisture evaporates.
- Combine olive oil, rosemary (or thyme), garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Stir constantly until garlic just begins to turn golden, about 2-3 minutes.
- Immediately strain oil through a fine-mesh strainer over the potatoes. Add salt and pepper to taste, and mix.
- Shake the pot that the potatoes are in so that they slam against all sides of the pot, this will loosen the outer layer of the potatoes to form a mashed layer around each potato piece.
- Preheat oven to 425°F (220°C).
- Transfer potatoes to a large rimmed baking sheet and separate them, spreading them out evenly.
- Transfer to oven and roast, without moving, for 30-35 minutes.
- Using a thin, flexible metal spatula flip potatoes. Continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking, 30 to 40 minutes longer.
- Transfer potatoes to a large bowl and add the garlic-rosemary mixture (optional) and minced parsley. Toss to coat and season with more salt and pepper to taste. Serve immediately.

SKILLET-ROASTED POTATO WAFERS

- Preheat the oven to 400 degrees. Peel the potatoes, and plunge them in cold water to clean them. Slice the potatoes evenly into very thin rounds. Pat dry.
- Place a 10-inch nonstick, ovenproof pan coated with two tablespoons of corn oil over medium-high heat. Distribute the potato slices evenly in the pan (they will overlap). Salt and pepper generously. Cook for five minutes, shaking the pan occasionally and using a spatula from time to time to redistribute the potatoes from bottom to top. Every minute or so, press the potatoes lightly with the spatula to flatten them.
- Transfer the pan to the preheated oven. Cook for 15 minutes. Every five minutes, remove potatoes from the oven and press them down; then, return to oven. Remove from the oven, place a plate over the pan and invert the potatoes onto the plate. Gently return the potatoes to the pan to brown the other side. Distribute one tablespoon of butter around the potatoes and return to the oven for five more minutes to brown. Cut into wedges and serve.

PAPPADAMS (LENTIL WAFERS)

- Reduce heat to medium-high. Slip 1 pappadam into oil and let it expand to its full size and turn light brown, 10 to 30 seconds.
