GUIDO BURGER
Steps:
- Heat a flat griddle to medium-high.
- Put the bun on the griddle to toast it. Then place the hamburger patty on the griddle and sprinkle with seasoning salt. When the bun is toasted, remove it from the griddle and set it in your prep area. Put the ketchup on the bottom part of the bun, then the pickles. Make sure to spread them out so that every flavor is in every bite.
- Place the pastrami on the griddle and sear away. Flip the hamburger patty, sprinkle with seasoning salt and cook to desired doneness. Place the Swiss cheese on top and melt. Add the pastrami on top of the cheese. Top the pastrami with the grilled onions.
- Now all you have left is the top part of the bun and the brown mustard. Squirt or spread the brown mustard on the bun top and place it on the grilled onions. Transfer the hamburger patty and toppings to the bottom part of the bun. Enjoy.
THE VORTEX BLUE 'SHROOM BURGER
Steps:
- Form the ground sirloin into 4 (8-ounce) patties. Over an open-flame, grill each burger to desired temperature. While the patties are grilling, cook bacon until desired crispness, and set aside.
- Butter both sides of each bun and grill until toasted. On each of the 4 bottom buns, place the burger, followed by the blue cheese spread, mushrooms, and bacon, in that order. On each of the top 4 buns, place the lettuce, tomato and red onion, in that order. Top with any additional condiments desired, sandwich the 2 sides, and serve.
- Combine both ingredients in a bowl and refrigerate for 2 hours prior to use.
- Melt butter in a large saute pan over medium heat. Add garlic and mushrooms and saute until tender. Add wine and simmer for 1 minute or until almost evaporated. Remove from heat and set aside until ready to use.
THE ANGRY HAWAIIAN BURGER
Steps:
- Make the angry Hawaiian sauce: Combine pickled jalapenos, pineapple and barbecue sauce in a bowl.
- Place bacon in large pot and cover with water. Boil until most of the fat is rendered, about 45 minutes. Drain bacon. Preheat a grill or pan, then form bacon into 4 patties and sear until crispy.
- Divide beef into 4 patties. Sprinkle beef patties with seasoned salt and cook over medium-high heat until desired doneness.
- Meanwhile, toast buns to desired doneness.
- Place one tomato slice on each bun bottom, then top with one portion shredded lettuce. Top beef patties and bacon patties with slices of provolone, then top each cheesed beef patty with a cheesed bacon patty.
- Top patties with angry Hawaiian sauce and bun tops, then finish by closing with bun bottoms.
