Steps:

  • Heat the oil in a medium saute over high heat. Sprinkle the fish evenly with the salt. Place in the pan skin-side down. Cook until translucent, then flip and add the butter. Cook until the butter is brown, and then add the corn and shallots. Saute for 2 minutes, and then baste the fish with the butter and shallot mixture and remove from the pan. Place the fish on a plate, and spoon the corn over.

1 tablespoon canola oil
Two 3-ounce fillets hogfish, skin on and pin bones removed
1/2 teaspoon kosher salt
2 tablespoons unsalted butter
2 tablespoons corn kernels
2 teaspoons chopped shallots

Steps:

  • Mix ingredients all together and add fillets. Let marinate for 1 hour at room temperature in a shallow bowl or dish. Keep flipping and coating. Put fish in a grill basket and put on medium grill with lid closed. Turn 1 time about 5 minutes on each side (give or take...depends on thickness).

3 T Old Bay seasoning
1 t Garlic Powder
dash of Salt
couple of dashes of Pepper
1/2 t Crushed Red Pepper

Cajun Fish Fillets image

Steps:

  • In a small bowl, combine paprika, garlic powder, thyme, salt, black pepper, cayenne pepper and oil to make a paste.
  • Pat fish dry with paper towels.
  • Using the back of a spoon, rub paste mixture evenly over the entire surface of the fish.
  • Cover with plastic wrap and refrigerate for 2 hours.
  • Preheat bbq to medium high and grease grill.
  • BBQ halibut, turning once, until cooked through, about 3 to 5 minutes per side (Alternately, cook fish in a nonstick frypan over medium high heat).
  • Cooking time may vary depending on thickness of fish.
  • Remove fish to a serving plate and serve with lemon wedges.
  • This rub works equally well with salmon, sea bass or tuna.
