Yield 4 candy apples

Steps:
- Insert lollipop sticks into 4 apples, one-third of the way. Line a baking sheet with parchment paper and coat with cooking spray. Stir together 1 1/4 cups sugar and 1/4 cup each corn syrup and water in a small saucepan; bring to a boil. Reduce the heat to medium and add 1/2 teaspoon red food coloring. Continue cooking, swirling the pan but not stirring, until a candy thermometer registers 290 degrees F, about 10 minutes; remove from the heat. Immediately dip each apple into the candy, then twirl the apple over the pan to let the excess drip off. Decorate (see instructions below).
- How to Decorate
- Spun-sugar apple: Dip the apple as directed, then hold sideways over the pan, dip a fork in the candy mixture and quickly wave it all over the apple to make thin threads. Let set.
- Candy cane apple: Roll the apple in crushed candy canes immediately after dipping. Let set.
- White chocolate apple: Let the coating set, then drizzle the apple with melted white chocolate. Sprinkle with silver nonpareils.
- Coconut apple: Roll the apple in shredded coconut immediately after dipping. Let set.
DATE-FILLED BAKED APPLE
"It's hard to say what's more appealing-the homey aroma of this treat baking in the oven or the wonderful flavor of the warm apple, sweet dates and crunchy walnuts," says field editor Dorothy Pritchett (above with husband Charlie) of Wills Point, Texas.

THANKSGIVING BAKED APPLES
We have always loved applesauce but wanted to do something a little bit more elegant for Thanksgiving. Over the years, I have adjusted this recipe, using different fruits and alcohols, but this is the most enjoyable combination. -Heather Edwards, Hopewell, New Jersey

Steps:
- Make the frosting: Add the cream cheese to a medium bowl and whisk until creamy. Add the honey and vanilla, and whisk until combined and smooth. Set aside.
- Slice the apples crosswise into ⅛-inch thick rounds starting 1 inch up from the bottoms. Each apple should yield 3-4 slices, or 12-16 total. Reserve the remaining apple trimmings for another use. Remove any seeds, then pat the apple slices with a paper towel to absorb any excess moisture.
- To make the reindeer apple cookies, scoop 1 tablespoon of peanut butter onto an apple slice and spread evenly over the surface. Place a mini peanut butter cookie at the lower center of the slice, then place a raspberry on top of the cookie. Add 2 candy eyes to the middle and 2 pretzels on the top as antlers. Repeat to make 3-4 more reindeer cookies.
- To make the star apple cookies, spread 1 tablespoon of cream cheese frosting evenly over an apple slice.
- Place a small star-shaped cookie cutter in a small bowl of hot water for 1-2 minutes. Remove the cutter from the water and quickly pat dry, then cut out a star-shaped hole from the center of the apple slice. Place the cutout star in an offset position over the star-shaped hole and decorate with festive sprinkles. Repeat to make 3-4 more star cookies.
- To make the wreath apple cookies, use a small round cookie cutter to cut out a round hole from the center of an apple slice. Transfer the remaining cream cheese frosting to a piping bag fitted with a small round tip and pipe around the apple slice in circular curlicues, until you have gone all the way around the apple slice 2 times. Decorate with green and red holly-shaped sprinkles. Repeat to make 3-4 more wreath cookies.
- Enjoy!

BAKED APPLES STUFFED WITH DRIED FRUIT AND PECANS
Steps:
- Preheat oven to 350°F. Core apples with corer. Stand apples up and make 4 evenly spaced vertical cuts starting from top of each apple and stopping halfway from bottom to keep apple intact. Brush inside of apples with lemon juice and stand apples in a 9-inch ceramic or glass pie plate.
- Toss together apricots, currants, pecans, brown sugar, cinnamon, and nutmeg in a bowl. Rub softened butter into dried-fruit mixture with your fingers until combined well, then pack center of each apple with mixture. Put a piece of remaining butter on top of each apple. - Bake in middle of oven, basting once, until apples are just tender when pierced with a fork, about 40 minutes. Remove foil and continue to bake until apples are very tender but not falling apart, 20 to 30 minutes more.
- Transfer to serving dishes and spoon sauce over and around apples. Serve with dollops of yogurt.
