THE BEST BANANA BREAD
The batter for this easy-to-make banana bread is enriched with sour cream, which gives it a subtle tang and super moist texture. In order to avoid this quick bread becoming tough and chewy, don't overmix the batter.

Steps:
- Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch loaf pan; set aside. In an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs and beat to incorporate.
- In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture and mix until just combined. Add bananas, sour cream, and vanilla; mix to combine. Stir in nuts and pour into prepared pan.
- Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 10 minutes. Let rest in pan for 10 minutes, then turn out onto a rack to cool.
HOLIDAY BANANA BREAD
This ever-popular tea bread is made Christmas-pretty with the addition of colorful candied fruits. This bread may look like a fruit cake but the taste is pure banana-delicious! I like to use candied red and green cherries and yellow candied pineapple, which I coarsely chop, in this bread for the prettiest look.

- Preheat oven to 350 degrees F. Thoroughly grease a 5 x 9-inch loaf pan.
- Sift the flour, measure, and sift with the baking powder and salt onto a piee of waxed paper. Add the nuts, raisins and candied fruits, and mix until well coated with the flour.
- Cream together the butter and sugar until fluffy. Beat in eggs one at a time until lthik and pale-lemon colored. Alternate additions of flour and fruit mixture and the mashed bananas, stirring after each addition until well blended. Begin and end with flour mixture.
- Spoon into prepared loaf pan and bake in preheated oven for about 60 minutrs or until bread pulls away from the sides of the pan.
- Let cool about 20 minutes before turning out on a rack to cool well.

This is a bread that I make at holiday time as well as during the year. Double the recipe to have enough for smaller gift loaves.

Steps:
- Cream butter and sugar well.
- beat in eggs, 1 at a time beating well after each addition.
- Add vanilla and stir.
- Measure first amount of flour, add baking soda and baking powder and salt into separate bowl and stir.
- toss walnuts, coconut and cherries with second amount of flour in another bowl.
- Add flour in 4 additions alternately with banana in 3 additions, beginning and ending with flour.
- Add fruit mixture, mix only until blended, do not overmix.
- turn into greased 9x5x3 inch loaf pan.
- Bake in 350F oven for 50-60 minutes or until an inserted wooden pick comes out clean.
- Let stand for 20 minutes.
- Turn out onto a rack to cool.

HOLIDAY BANANA BREAD
Banana bread that's crisp on the top, moist in the middle, and with a special Yuletide twist. This recipe makes 3 loaves, so use a big bowl when you're mixing these ingredients. Also, pardon the metric, but it's cleaner this way. For those who don't use metric: 325 mg sugar = 1 5/8 cups + 1/4 teaspoon 210 mL liqueur = 1/2 cup + 1/3 cup + 2 1/2 teaspoons 115 mL syrup = 1/3 cup + 1/8 cup + 1 teaspoon These eliminate the need for additional liquid in the recipe. You may add chopped walnuts or chocolate chips if you wish, but I don't think they're necessary.

Steps:
- Grease and flour three loaf pans and preheat oven to 350 F (175 C).
- Cream together butter and sugar.
- Little by little, add in the liqueur and gingerbread syrup. When all the liquid is added, it should resemble mayonnaise.
- Add bananas, baking soda, baking powder and salt. Blend well.
- Taste the mixture at this point; you should be able to taste the banana and gingerbread syrup in equal measure. Adjust to taste ad libitum.
- Blend in eggs.
- Blend in flour.
- Add chopped nuts or chocolate chips, if you so choose.
- Pour into greased and floured pans.
- Bake all three pans at 350 for 55 minutes or until toothpick inserted in the center comes out clean.
