FESTIVE FRUIT GELATIN MOLD

Steps:
- Prepare the gelatin mix according to the package instructions, using the seltzer in place of the cold water. Allow to cool for 30 minutes.
- Meanwhile, place a mandarin followed by a blackberry in the grooves of a 2.1-quart fluted bundt pan. Repeat to form a circle. Pour in just enough of the gelatin to cover the fruit (about 1 1/2 cups). Chill until set, about 1 1/2 hours, leaving the remainder of the gelatin mix on the counter.
- Sprinkle the blueberries in an even layer over the firm gelatin. Cover with the remaining mandarin oranges. Top with the remaining blackberries. Pour the remaining gelatin mixture over the fruit. Chill until firm, at least 8 hours and up to overnight.
- When ready to serve, place the gelatin mold in a bowl of warm water for 2 minutes to loosen. Invert onto a circular serving platter. Fill the center of the mold with fresh berries to serve.

- In a large bowl, dissolve lime gelatin in 2 cups boiling water. Add 2 cups cold water; stir. Pour into a 13-in. x 9-in. dish; refrigerate until firm but not set, about 1 hour., In a large bowl, dissolve lemon gelatin in 1 cup boiling water. Stir in marshmallows until melted. Cool for 20 minutes. In a small bowl, beat cream cheese and mayonnaise until smooth. Gradually beat in lemon gelatin. Stir in pineapple. Carefully spoon over the lime layer. Chill until firm but not set. , Dissolve cherry gelatin in 2 cups boiling water. Add remaining cold water; stir. Spoon over the lemon layer. Refrigerate entire gelatin salad overnight. Cut into squares to serve.

- Spray inside of mold tray with cooking spray; place, fill side up, on baking sheet.
- Add boiling water to gelatin mix in bowl; stir 3 min. until completely dissolved. Pour into prepared mold.

- Run knife around edges of molds to loosen JIGGLERS; unmold onto plate. Keep refrigerated.

RED AND GREEN HOLIDAY MOLD

- Add 1-1/2 cups boiling water to red gelatin mix in large bowl; stir 2 min. until completely dissolved. Stir in cold water. Reserve 1-1/2 cups gelatin; let stand at room temperature. Pour remaining gelatin into 5-cup mold sprayed with cooking spray. Refrigerate 45 min. or until set but not firm.
- Stir remaining boiling water into lime gelatin mix in medium bowl 2 min. until completely dissolved. Add ice cream; stir until completely melted. Spoon over gelatin layer in mold. Refrigerate 20 min. or until gelatin is set but not firm.
- Spoon reserved red gelatin over creamy layer in mold. Refrigerate 4 hours or until firm. Unmold. Top with COOL WHIP.

- Stir boiling water into dry gelatin in large bowl at least 2 min. until completely dissolved. Stir in cold ginger ale and spices. Refrigerate about 1-1/2 hours or until thickened (spoon drawn through leaves a definite impression).
- Stir in fruits and pecans. Spoon into 5-cup mold sprayed with cooking spray.
