CHOCOLATE PEANUT BUTTER CANDIES
Chocolate and peanut butter come together in these delicious candies - an elegant dessert.

Steps:
- Line 8- or 9-inch square pan with foil, leaving 1 inch of foil overhanging at 2 opposite sides of pan; grease foil with butter.
- In medium bowl, mix 1/2 cup peanut butter, the butter, peanuts and vanilla. Stir in 2 cups powdered sugar, 1/2 cup at a time, until stiff dough forms. If dough is crumbly, work in additional 1 tablespoon peanut butter. Pat mixture in pan. Cover; refrigerate about 1 hour or until firm.
- Use foil to lift candy from pan; remove foil. Cut into 8 rows by 8 rows. Line cookie sheet with waxed paper. In 1-quart heavy saucepan, melt chocolate chips and shortening over low heat, stirring constantly. Dip 1 peanut butter square at a time into chocolate mixture. Place on cookie sheet. Refrigerate uncovered about 30 minutes or until firm.
- In small bowl, mix 1/2 cup powdered sugar and 2 tablespoons peanut butter. Beat in milk with wire whisk until smooth. If necessary, stir in additional milk, 1 teaspoon at a time, until thin enough to drizzle.
- Drizzle icing over tops of chocolate-covered squares. Refrigerate uncovered about 30 minutes or until firm. Store candies loosely covered in refrigerator.

EASY CHOCOLATE-PECAN CANDY
A super-simple chocolate bark with salt and pecans. I found it in Southern Living magazine. Ghiradelli chocolate is recommended for this recipe.

- Place pecans in a single layer on a baking sheet. Bake at 350 degrees for 8 - 10, until toasted.
- Line a 17x12 jelly roll pan with parchment paper. Break each chocolate bar into eight equal pieces (you will end up with 48 pieces in total). Arrange them in a checker-board pattern on the jelly roll pan. The pieces will touch.
- Bake at 225 degrees for 5 minutes or just until chocolate is melted. Remove pan to a wire rack. Swirl chocolate with a wooden pick. Sprinkle evenly with pecans and salt.
- Chill 1 hour or until firm. Break into pieces. Store in airtight container in refrigerator up to one month.

- Butter a 9-in. square pan with 2 teaspoons butter; set aside. In a large saucepan, combine the pectin, baking soda and water (mixture will be foamy). In another saucepan, combine sugar and corn syrup. Bring both mixtures to a boil. Cook until foam on pectin mixture thins slightly and sugar mixture comes to a full rolling boil, about 4 minutes. Gradually add pectin mixture to boiling sugar mixture, stirring constantly. Boil for 1 minute, stirring constantly.
- Remove from the heat. Stir in orange oil and food coloring. Immediately pour into prepared pan. Let stand at room temperature for 3 hours or until set.
- Sprinkle waxed paper with sugar; invert pan onto sugar. With a knife dipped in warm water, cut candy into 1-in. squares; roll in additional sugar. Place on a wire rack. Let stand, uncovered, at room temperature overnight. Store in an airtight container. Yield: 81 pieces.

EASY (BUT ELEGANT) CHOCOLATE CANDY
These are so easy to make that the kids can help me prepare them. It is just as easy to make a wide variety of these fancy morsels which allows you to set forth an impressive candy tray. Also makes an excellent gift. I prefer to work in small batches but the recipe can certainly be doubled or tripled.

Steps:
- Place the chocolate wafers in a microwave safe dish.
- Heat for 1 minute and stir.
- If needed, heat in 15 second intervals, stirring after each, until melted and smooth.
- Stir in one or two of the filling ingredients listed.
- The amount and combinations depends on personal taste but don't add so much that the mixture doesn't hold together.
- Spoon mixture into mini candy papers.
- Garnish with more the the Filling Ingredient (s) used or drizzle, in a contrasting chocolate, in a zig-zag pattern on top.
- TIPS: do not allow moisture to come in contact with the chocolate while it is melting or it will "bind" and become an unusable mess.
- Make sure your bowl and spoon are completely dry.
BUTTERCREAM FONDANT FOR CHOCOLATE CANDIES
This is an excellent fondant filling to be dipped in dark, milk or white chocolate. The recipe was handed down by my grandparents. This is a base and can be flavored before dipping. You will need a large marble slab or something comparable, a candy thermometer and candy paddles or a large spatula. The cooking time is short, but the molding takes some time. Do not stop molding once you start because if the sugar crystalizes, it will ruin the batch.

Steps:
- 1. Combine butter, sugar, milk, cream and cream of tartar in a large, heavy saucepan.
- 2. Stir until sugar is all moistened.
- 3. Place on high heat and stir to make sure everything is combined.
- 4. Bring to a boil and DO NOT STIR after it begins to boil.
- 5. Gently lower thermometer into boiling syrup.
- 6. Periodically use a brush of water to go around the sides of pan to guide sugar crystals into syrup.
- 7. Continue to cook without stirring to 236°F.
- 8. Wipe off a large, cold marble slab with water (do not dry) and pour fondant on as soon as it hits 236°F.
- 9. Let it cool a few minutes, make sure heat is no longer coming off.
- 10. When the dents made by pressing your finger into it remain without filling immediately, it is ready to work.
- 11. Work lukewarm with large paddle or spatula into a ball, then spread thin and repeat. Incorporate marshmallow cream at this time.
- 12. When fondant starts to hold its shape, start kneading with your hands. It will become crumbly but keep working until it is smooth.
- 13. Once it is smooth, cover with plastic wrap and put into an airtight bowl in the fridge. It is best if kept for 1-2 weeks before flavoring.
