HOMEMADE COCKTAIL SAUCE
A completely homemade cocktail sauce that is great with seafood and even with fries! Adapted from Marlene Sorosky, an award-winning cookbook author.This recipe fits in the Spanish, English, Mexican and Southwestern catagories.

Steps:
- Cut tomatoes in half crosswise (not through stem end), squeeze out seeds, and
- chop into about 1/4-inch dice. In a medium bowl, stir together tomatoes, onion, celery, garlic, vinegars, sugar, pepper, Worcestershire sauce, lemon juice, tomato paste, and salt. Place ingredients from bowl into a crockpot. Cook 4-5 hours on low.
- Stir in horseradish. Remove from crockpot and place in container with lid. Refrigerate for at least 30 minutes for flavors to blend. (The sauce may be refrigerated up to 2 weeks.)
- Makes 2-1/4 cups.

BOILED DUNGENESS CRAB WITH HOMEMADE COCKTAIL SAUCE

- For the cocktail sauce: Combine the chili sauce, horseradish, Worcestershire sauce, lemon juice, salt and pepper in a bowl. Chill until serving.
- For the crab: Drop both whole live crabs in a large pot of salted boiling water. Let cook until the shells turn a bright red, 10 to 15 minutes. Be aware that the meat cooks very fast once exposed to the hot water. Remove the crabs from the water and pull the main shell off. If this is difficult, insert a large knife between the shells in the back of the crab where they meet and pry open. Once the top shell is removed, rinse the crab in the sink, cut in half (from front to back, not side to side) and peel off the gills (which are attached to the bottom portion) and discard. Clean out all entrails and other waste from the top shell portion. Place on a plate with the lemon and lime slices, and place the top shell back on top for presentation. Serve with the cocktail sauce.
COCKTAIL SAUCE
Steps:
- Combine the ketchup, chili sauce, horseradish, lemon zest and juice and hot sauce to taste in a small mixing bowl. Serve alongside fried shrimp. Store, refrigerated, in an airtight container.

QUICK COCKTAIL SAUCE

- In small bowl combine ketchup, horseradish, a dash of Worcestershire, a squirt of lemon, and a dash of Tabasco sauce. Chill and serve.
CLASSIC COCKTAIL SAUCE

- Mix together all the ingredients in a small bowl until well blended. Taste and add more lemon juice or hot sauce as needed. Cocktail sauce will keep in the refrigerator in a covered container for at least 2 weeks.
CALAMARI FRIES WITH HOMEMADE COCKTAIL SAUCE AND PONZU MAYO
Steps:
- Heat canola oil to 360 degrees F in a pot.
- Slice the squid against the grain into strips. Mix the flour with some sea salt and black pepper and pour out onto a plate. Dredge the squid first in the flour, then in the eggs, and then in the breadcrumbs. Fry until golden and crispy, 20 seconds. Drain on a wire rack.
- Place the calamari fries in a glass and garnish with lemon wedges. Serve with the Homemade Cocktail Sauce and Ponzu Mayo in shot glasses.
- Mix the ketchup, horseradish, paprika, cayenne, lemon zest, Worcestershire and lemon juice in a bowl, and season with black pepper.
- Mix together the mayonnaise, chili sauce, ponzu and garlic in a bowl.
COCKTAIL SAUCE (INA GARTEN BACK TO BASICS)

This sauce from Back to Basics cookbook from 2008, is perfect for any shrimp cocktail and easy to make.
