- 1. Preheat oven to 350 degrees. Line cupcakes pan with paper baking liners.
- 2. Blend cake mix and soda until moistened. Beat with a mixer on low speed for 2 minutes. Fill cupcake holders until 2/3 full.
- 3. Bake for 18-22 minutes or until toothpick inserted comes out clean. Let cool and frost with whatever kind of frosting you want! Enjoy =).

FUNFETTI CUPCAKES
These are truly fun to make and fun for kids to eat and it is a good cake recipe that starts with a cake mix. They have brightly colored rainbow sprinkles inside and brightly colored dots on the frosting of your choice. I like Recipe #261024 by Marg (CaymanDesigns). For a patriotic holiday you could use red, white, and blue sprinkles, or for another holiday the color that represents it.

Steps:
- Mix all the ingredients (EXCEPT for the sprinkles) together in large bowl.
- Fold in sprinkles.
- Put cupcake papers in pan and lightly spray.
- Fill the papers 2/3 to 3/4 full and bake at 350 degrees for about 15-20 minutes or till done.
- Let cool and frost and sprinkle with more sprinkles.

- Preheat the oven to 350 degrees F. Line or spray 12 muffin cups.
- In a small bowl, combine the flour, baking powder, and salt. Stir together and set aside.
- In the bowl of a stand mixer, cream the butter and sugar until light and fluffy.
- Add the egg whites to the bowl and beat until combined.
- Add in the vanilla and almond extracts and mix until incorporated.
- Mix in the dry ingredients in three additions, alternating with the milk, beginning and ending with the dry ingredients. Mix just until incorporated.
- Fold in the sprinkles with a spatula.
- Divide the batter evenly between the muffin cups. Bake until a toothpick inserted in the middle comes out clean, about 20 minutes. Allow to cool in pans 10 minutes, then remove to a wire rack to cool completely.
